Unrolled Cabbage Roll Casserole

Yields: 4-6 servings
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free


Ingredients: 

  • 6 cups Green Cabbage (chopped)
  • 2 cups Water
  • 1 1/2 cups Jasmine Rice
  • 2 - 15 oz cans Tomato Sauce
  • 15 oz. can diced Tomatoes 
  • 1 1/2 cups TVP Crumbles (re-hydrated)
    • 1 tbsp Tomato Paste
    • 1 tbsp Braggs
    • 1 tbsp Nutritional Yeast
    • 1 tsp Hoff Seasoning
  • 1 Onion (chopped)
  • 1 tbsp minced Garlic
  • 1/4 cup Nutritional Yeast
  • 2 tsp Hoff Seasoning
Optional Cashew Cream
  • 1/2 cup Cashews
  • 1/2 cup Water

Directions:
  1. Pre-heat oven to 400 degrees
  2. Make “ground beef” by mixing re-hydrated TVP with seasonings, set aside to mingle
  3. Blend Cashews & Water to make Cashew Cream if adding, set aside
  4. Dump everything except Cabbage into a Dutch Oven, except Cashew Cream
  5. Stir to combine, top with Cabbage
  6. Cover
  7. Bake for 1 hour or until Rice & Cabbage is desired texture
  8. Mix everything together
  9. Serve with Cashew Cream
