Hoff's Tikka Masala
Yields: 5-6 servingsmeat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free
Ingredients:
- 2 cups Jasmine Rice
- 1/2 cup Cashews + 1 cup Water = Cashew Cream
- 24 oz. Marinara Sauce
- 1 cup Soy Curls (reconstituted)
- 10 oz. frozen Butternut Squash
- 1 15 oz. can diced Potatoes (rinsed & drained)
- 1 15 oz. can Chickpeas (rinsed & drained)
- 1 carton Mushrooms (minced)
- 1 Zucchini (shredded)
- 1/2 cup frozen Spinach
- 1/2 cup frozen Organic Corn
- 1/2 cup frozen Peas
- 1 Sweet Onion (half moon slices)
- 1 tbsp. minced Ginger
- 1 tbsp. minced Garlic
- Juice from 1 Lime
- 1 tbsp. Garam Masala
- 1 tbsp. Paprika
- 1 tbsp. Cumin
- 1 tbsp. Brown Sugar
- 1 tsp. Cinnamon
- 1 tsp. Turmeric
- Season with Salt & Pepper
Directions:
- Prepare Rice, set aside
- Blend Cashews with Water, set aside
- Add all remaining ingredients + Cashew Cream (except Corn, Peas & Lime Juice) to the IP
- Lock lid in place and make sure pressure release valve is closed
- Press "Manual" button & reduce time to 10 minutes
- When done, use quick release
- Stir in Corn, Peas & Lime Juice
- Serve over Rice
