Hoff's Taco Soup (IP)
Yields: about 6 cups
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free
Ingredients:
- 4 cups Water or Veggie Broth
- 15 oz can Black Beans (rinsed & drained)
- 15 oz Organic Corn (rinsed & drained
- 15 oz can diced Tomatoes
- 1/2 cup Soy Crumbles
- 1/2 cup Rice
- 1 Red Pepper (chopped)
- 1 Sweet Onion (chopped)
- 1 tbsp Tomato Paste
- 1 tbsp. minced Garlic
- 1/2 cup Nutritional Yeast
- 1 tbsp Taco Seasoning
- 1 tbsp Lime Juice
Optional Cashew Cream
(blend all ingredients)
- 1/2 cup Cashews
- 1/2 cup Water
- 1 tsp Lemon Juice
- 1/2 tsp Salt
Directions:
- Dump everything (except Lime Juice into the IP
- Lock lid in place and make sure pressure release valve is closed
- Press "Manual" button, reduce time to 3 minutes
- When done, use quick release method
- Add Lime Juice
- Optional: serve with sliced Avocado, Cashew Cream, crushed Tortilla Chips
