Hoff's Hummus Pasta

Yields: 5-6 servings
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free*



Ingredients:
  • 16 oz. Pasta of choice*
  • 1/2 - 1 cup Pasta Water (reserved)
  • 1 carton sliced Mushrooms
  • 1/2 Onion (chopped)
  • 10 oz Hummus of choice*
  • 1 tsp. minced Garlic

Directions:
  1. Cook Pasta according to directions
  2. Meanwhile air-fry Mushrooms, Onion & Garlic
  3. Mix Hummus with Pasta Water to desired consistency
  4. Mix everything together
  5. Plate & eat!

Hoff's Taco Soup (IP)

Hoff's Taco Soup (IP)

Yields: about 6 cups
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free



Ingredients

  • 4 cups Water or Veggie Broth
  • 15 oz can Black Beans (rinsed & drained)
  • 15 oz Organic Corn (rinsed & drained
  • 15 oz can diced Tomatoes
  • 1/2 cup Soy Crumbles
  • 1/2 cup Rice
  • 1 Red Pepper (chopped)
  • 1 Sweet Onion (chopped)
  • 1 tbsp Tomato Paste
  • 1 tbsp. minced Garlic
  • 1/2 cup Nutritional Yeast
  • 1 tbsp Taco Seasoning
  • 1 tbsp Lime Juice
Optional Cashew Cream 
(blend all ingredients)
  • 1/2 cup Cashews
  • 1/2 cup Water
  • 1 tsp Lemon Juice
  • 1/2 tsp Salt

Directions
  1. Dump everything (except Lime Juice into the IP
  2. Lock lid in place and make sure pressure release valve is closed 
  3. Press "Manual" button, reduce time to 3 minutes
  4. When done, use quick release method 
  5. Add Lime Juice
  6. Optional: serve with sliced Avocado, Cashew Cream, crushed Tortilla Chips

Hoff's Pasta w/Butternut Squash Sauce

Yields: 4-6 servings
meat-free, dairy-free, egg-free, oil-free, soy-free



Ingredients:
  • 16 oz Gluten-free Pasta 
  • 12 oz frozen Butternut Squash
  • 1/2 cup Water
  • 1/2 cup Nutritional Yeast
  • 1/4 cup Cashews
  • 1 tsp Lemon Juice
  • 1 tsp minced Garlic
  • 2 tsp. Sea Salt 
  • 1 tsp. Hoff Seasoning
  • Pinch Nutmeg 
  • Black Pepper (to taste)
Directions:
  1. Bring one large pot of water to boil, cook Pasta according to directions
  2. In a Vitamix/Blender, place remaining ingredients
  3. Blend until smooth, about 2-3 minutes
  4. Drain Pasta, combine with Sauce & heat through
