Hoff's Pasta w/Butternut Squash Sauce
Yields: 4-6 servingsmeat-free, dairy-free, egg-free, oil-free, soy-free
Ingredients:
- 16 oz Gluten-free Pasta
- 12 oz frozen Butternut Squash
- 1/2 cup Water
- 1/2 cup Nutritional Yeast
- 1/4 cup Cashews
- 1 tsp Lemon Juice
- 1 tsp minced Garlic
- 2 tsp. Sea Salt
- 1 tsp. Hoff Seasoning
- Pinch Nutmeg
- Black Pepper (to taste)
- Bring one large pot of water to boil, cook Pasta according to directions
- In a Vitamix/Blender, place remaining ingredients
- Blend until smooth, about 2-3 minutes
- Drain Pasta, combine with Sauce & heat through
