Unrolled Cabbage Roll Casserole
Ingredients:
- 6 cups Green Cabbage (chopped)
- 2 cups Water
- 1 1/2 cups Jasmine Rice
- 2 - 15 oz cans Tomato Sauce
- 15 oz. can diced Tomatoes
- 1 1/2 cups TVP Crumbles (re-hydrated)
- 1 tbsp Tomato Paste
- 1 tbsp Braggs
- 1 tbsp Nutritional Yeast
- 1 tsp Hoff Seasoning
- 1 Onion (chopped)
- 1 tbsp minced Garlic
- 1/4 cup Nutritional Yeast
- 2 tsp Hoff Seasoning
Optional Cashew Cream
- 1/2 cup Cashews
- 1/2 cup Water
Directions:
- Pre-heat oven to 400 degrees
- Make “ground beef” by mixing re-hydrated TVP with seasonings, set aside to mingle
- Blend Cashews & Water to make Cashew Cream if adding, set aside
- Dump everything except Cabbage into a Dutch Oven, except Cashew Cream
- Stir to combine, top with Cabbage
- Cover
- Bake for 1 hour or until Rice & Cabbage is desired texture
- Mix everything together
- Serve with Cashew Cream
