Hoff's Macaroni Salad
Yields: 5 servingsmeat-free, dairy-free, egg-free, oil-free, gluten-free, soy-free
Ingredients:
- 12 oz. gluten-free Macaroni Pasta
- 1 Red Pepper (diced)
- 1 Red Onion (diced)
- 1/4 cup Sweet Pickle Relish
- 3 tbsp. Dill (fresh or dried)
- 1 1/2 cups vegan Mayo
- 2 tbsp. Sweet Pickle Relish juice
- 1 tbsp. Lemon Juice
- 1 tbsp. White Sugar
- 1 tbsp. Yellow Mustard
- 1 tsp. Garlic Powder
- 1 tsp. Salt
- Season w/Pepper
Directions:
- Cook Pasta, run cold water over Pasta to stop the cooking process, drain well
- Meanwhile mix remaining ingredients together in a large bowl
- Mix in cooked Pasta
- Refrigerate at least 30 minutes to allow flavors to blend together
