Vegan Liquid Mozzarella
Yields: about 1 cup, enough for 2 Pizzasmeat-free, dairy-free, egg-free, oil-free, gluten-free, soy-free
Ingredients:
- 1 cup Water
- 1/2 cup Cashews or Chickpeas
- 1/4 cup (4 tbsp) Tapioca Starch or Flour (same thing)
- 2 tbsp Nutritional Yeast
- 1 tsp Lactic Acid or Lemon Juice
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 1 tsp Sea Salt
- Blend ingredients together using a Vitamix for 5 minutes (once the motor starts to drag, Cheese is ready)
- Immediately transfer Cheese to storage container or use, will continue to thicken as it cools (clean carafe immediately)
Hoff Thoughts: This liquid cheese works for pizza, lasagna, grilled cheese (increase Nutritional Yeast to 1/2 cup), quesadillas, Reuben’s, “meat”ball subs & mushroom cheese “steaks.”
