*Vegan Hamburger Helper Casserole

*Vegan Hamburger Helper Casserole

Yields: 6-8 servings
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free


Ingredients: 

  • 16 oz. GF Pasta
  • 29 oz. can Tomato Sauce
  • 15 oz. can diced Tomatoes 
  • 1 cup TVP Crumbles (re-hydrated)
  • 2 cups unsweetened plain Plant Milk or Water
  •  6 oz. Tomato Paste
  • 1/2 cup Nutritional Yeast
  • 1 tbsp. Garlic Powder
  • 1 tbsp. Onion Powder
  • 2 tsp. Oregano
  • 2 tsp. Smoked Paprika
  • 1 tsp. Mustard
  • 1/2 tsp. Chili Powder

Directions:
  1. Pre-heat oven to 400 degrees
  2. Dump everything into a 9x13 baking dish
  3. Stir to combine, cover
  4. Bake for 1 hour or until Pasta is desired texture

Ingredients:
  • 1/2 - 15 oz can Pumpkin puree
  • 1/3 cup Raw Oats
  • 1 1/2 cups Plant-Based Milk
  • 4 Dates
  • 2 tbsp Molasses
  • 2 tbsp Maple Syrup
  • 1 tsp Ginger
  • 1 tsp Nutmeg
  • 1 tsp Cinnamon
  • 1/4 tsp Sea Salt


Directions:
  1. Blend all ingredients until smooth about 30 seconds

  3. Place in freezer for 24 hours without the lid*

Ingredients:
  • 24 oz Ore-Ida Homestyle Steam N Mash Potatoes
    • Unsweetened Plant-Milk
    • 1 tsp Garlic Powder
    • 1 tsp Onion Powder
  • 15 oz can Organic Corn (rinsed & drained)
  • 15 oz can Green Beans (rinsed & drained)
  • 12 oz Pepperidge Farm Herb Classic Seasoning Stuffing
    • 2 cups Vegetable Broth
    • 1 tbsp dried Onion Flakes
  • 2 cups Soy Curls (rehydrated)
    • 2 tbsp Nutritional Yeast
    • 1 tbsp Braggs Liquid Amino
    • 1 tbsp Corn Starch
    • 1/4 tsp Poultry Seasoning
  • 2 packets Simply Organic Vegetarian Gravy

Directions:
  1. Prepare Mashed Potatoes according to package substituting Plant-milk & seasonings
  2. Add enough Milk to reach desired consistency, set aside
  3. Meanwhile, in small sauce pans, heat Corn & Green Beans or use the microwave (you do you)
  4. Mix rehydrated Soy Curls with Braggs, Nooch, Corn Starch & Poultry Seasoning
  5. Layout Soy Curls in single layer on a cooking tray, air-fry for 10 minutes at 400 degrees
  6. Prepare Stuffing according to stove-top directions  (skip the butter, it’s fine & I skip everything else & use Vegetable Broth & Onion flakes)
  7. Prepare Gravy according to package
  8. You’re done - assemble your bowl!
  9. Cranberry sauce is optional
  10. Season with Salt if needed

Ingredients:
  • 6 cups Plant-based Milk
  • 1 cup Cacoa Powder
  • 8 Dates
  • 1 tbsp Tapioca Starch
  • 1 tbsp Vanilla Powder
  • 2 tsp Salt

Directions:
  1. Blend ingredients together with a high speed blender until well combined 
  2. Store in airtight container in the fridge up to 1 week

Preparation: 
  1. Shake “Concentrate” container
  2. Mix 1/2 cup Concentrate with 1/2 cup Water in favorite mug
  3. Microwave 2 minutes or until preferred temp
  4. Enjoy the cozy!

Rice:
  • 2 cups Jasmine Rice
  • 2 1/2 cups Water

Stir-Fry Ingredients:
  • 1 cup Soy Curls (rehydrated)
  • 1 head Broccoli (chopped) 
  • 1 cartoon Mushrooms (sliced) 
  • 1 cup Edamame 
  • 1 cup Sauerkraut/Shredded Cabbage
  • 1 Red Pepper (chopped) 
  • 1/2 Sweet Onion (chopped)

Sauce Ingredients:
  • Juice from 1 Orange
  • 1/4 cup Bragg Liquid Aminos
  • 1/4 cup Water
  • 1 tbsp Lime
  • 2 tbsp Brown Sugar
  • 1 tbsp Corn Starch
  • 1 tsp minced Ginger
  • 1 tsp minced Garlic

Directions:
  1. Whisk sauce ingredients together or shake together using a jar
  2. Stir Veggies & sauce together in a glass baking dish
  3. Bake at 400 degrees for 40 minutes
  4. Meanwhile prepare Rice
  5. Once everything is cooked, spoon Rice into a bowl, top with Veggies & any additional sauce such as Tahini if desired
