meat-free, dairy-free, egg-free, oil-free, gluten-free
Ingredients:
- 2 cups Water
- 1 1/2 cups Jasmine Rice
- 12 oz. firm Tofu (pressed & drained)
- 1 cup Mushrooms (sliced)
- 1 cup frozen Organic Corn
- 1/2 cup shredded Carrots
- 1/2 cup shredded Cabbage or Cole Slaw mix
- 1/2 cup frozen Peas
- 1/2 Onion (chopped)
- 1/2 cup Braggs
- 1 tsp. minced Garlic
- 1 tsp. minced Ginger
- 2 tsp. Hoff Seasoning
- 1 tsp. Black Salt
- 1/2 tsp. Turmeric
Directions:
- Crumble Tofu into “scramble egg-like” pieces
- Toss Tofu with Black Salt & Hoff Seasoning, Turmeric, marinate overnight or at least a few hours
- Add all ingredients into a large baking dish, cover & place in fridge until ready to cook
- Cover & bake in preheated 400 degree oven for 60 minutes or until rice is cooked
