Hoff’s Asian Noodles
Yields: 4 servingsmeat-free, dairy-free, egg-free, oil-free, gluten-free
Ingredients:
- 4 cups Veggie Broth
- 1 box Rice Noodles (broken into smaller pieces)
- 1 bag Asian Salad Mix or Cole Slaw Mix or 4 cups Cabbage (chopped)
- 1 carton Mushrooms (sliced)
- 2 Carrots (shredded)
- 1 Red Pepper (sliced)
- 1 cup organic frozen Corn
- 1 cup organic frozen Edamame or 1 block firm Tofu (cubed)
- 1 cup Onions (chopped)
- 1 Lime
- 4 tbsp. Braggs
- 2 tsp. Frozen Ginger
- 2 tsp. minced Garlic
Directions:
- In a large pot, add Greens, Mushrooms, Peppers, Onions, Braggs, Ginger & Garlic & sautee
- Add broth, bring to a boil
- Drop in Rice Noodles & remaining ingredients, stir, cover & cook for 5 minutes (go by Rice Noodle directions)
- Remove from heat
- To finish squeeze juice from Lime over dish
