Hoff’s Tomato Sipping Soup
Yields: 8 servings
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free
Ingredients:
- 4 cups Veggie Broth
- 1 jar Roasted Red Peppers
- 1 Zucchini (shredded)
- 2 Carrots (shredded)
- 1 cup Mushrooms (shredded)
- 3 - 14.5 oz cans Diced Tomatoes
- 1 15 oz can diced Potatoes (rinsed & drained)
- 1/2 cup Red Lentils
- 1/2 Onion (chopped)
- 1 tbsp. minced Garlic
- 2 tsp. Sugar
- 2 tsp. Salt
- 2 tsp. Hoff Seasoning
- 1 tsp. “Chicken” Broth
Directions:
- Add all ingredients to the IP
- Lock lid in place and make sure pressure release valve is closed
- Press "Manual" button & reduce time to 5 minutes
- When done, use manual release method
- Using an immersion blender, blend soup to desired consistency
