Hoff’s Rice Noodle Soup
Yields: 6 servingsmeat-free, dairy-free, egg-free, oil-free, gluten-free
Ingredients:
- 4 cups Veggie Broth
- 4 cups Water
- 1 pack Thin Rice Noodles
- 1 pack Firm Tofu (cubed)
- 12 oz. frozen Broccoli Florets
- 1 cup frozen Organic Corn
- 1 cup frozen Edamame
- 1 cup Cabbage (chopped)
- 1 Zucchini (shredded)
- 1 Carrot (shredded)
- 1 carton Mushrooms (shredded)
- 1/2 cup Onions (chopped)
- 1 sheet Seaweed (in pieces)
- 1 tbsp. Minced Garlic
- 1/2 cup Braggs
- 4 tbsp. Sweet & Sour Sauce
- 3 tbsp. Brown Sugar
- 1 tbsp. Tamarind Paste
- 2 tsp. Ginger
Directions:
- Dump all ingredients into a large pot, except Rice Noodles
- Cover & cook all day on Simmer
- 15 minutes before serving add Thin Rice Noodles, once desired texture, serve
