Hoff's Pad Thai III
Yields: a lotmeat-free, dairy-free, egg-free, oil-free, gluten-free
Ingredients:
- 14 oz. pack Rice Noodles
- 7 cups Water
- 12 oz. bag Asian Chopped Salad Mix
- 1 Zucchini (shredded)
- 1/2 cup Shelled Organic Edamame
- 8 oz. carton Mushrooms (shredded)
- 1/2 cup Organic Corn
- 1 Carrot (shredded)
- 1/2 cup Onion (chopped)
- 1/2 cup Braggs
- 3 tbsp. Brown Sugar
- 2 tbsp. Almond Powder
- 1 tbsp. Tamarind Paste
- 1 tbsp. powder Ginger
- 1 tbsp. minced Garlic
- Juice from 1 Lime
Directions:
- Add all ingredients (except Noodles) to a large pot, bring to a boil, add Noodles
- Cook for 6 minutes or until Noodles are desired texture
- Sauce will thicken as dish sits
- Enjoy!
