Hoff's High Fiber Gluten-Free


Muffi


Yields: About 12 muffins
dairy-free, egg-freeoil-free, gluten-free


Ingredients:

Dry Ingredients
  • 1 cup Oat Flour
  • 1/2 cup Whole Oats
  • 1/2 cup Brown/White Sugar
  • 1/4 cup ground Flax Seed
  • 1/4 cup Chia Seeds
  • 1 tbsp Cinnamon
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Sea Salt
Wet Ingredients
  • 1/3 cup Water
  • 1/2 cup Apple Sauce
  • 1 cup Blueberries
  • 1/2 (15 oz) can Pumpkin
  • Juice from 1/2 Lemon

Directions:
  1. Preheat oven to 375 degrees
  2. In large food processor combine dry ingredients (except whole Oats)
  3. Add wet ingredients (except Blueberries) to the dry mixture, combine for 30 seconds (not too much)
  4. Fold in Oats & Blueberries
  5. Scoop batter silicon Muffin pan & bake for 15-20 minutes
Hoff Thoughts: This dense muffin yields about 3 grams of fiber per muffin.
