Hoff’s Spring Rolls
meat-free, dairy-free, egg-free, oil-free, gluten-freeYields: about 6 Rolls
Roll Ingredients:
- Rice Paper Wrappers
- 10-12 oz. package of Rice Noodles
- Greens (of choice, shredded)
- Cucumber (shredded)
- Carrots (shredded)
- Edamame (optional)
- Avocado (optional)
Dipping Sauce Ingredients:
- 1/4 cup Almond Butter Powder
- 2 tbsp. Braggs
- 1 tbsp. Rice Vinegar
- 1 tbsp. Maple Syrup
- 1 tbsp. Lime Juice
- 1 tsp. Ginger
- Water
Directions:
- Prepare Noodles according to the box directions, set aside to cool (must be cool before wrapping or Rice Paper will break apart)
- Soak Rice Paper in Water for about 20 seconds
- Assemble Rolls, set aside (careful not to let them touch each other)
- Whisk Sauce ingredients together (except Water) in a bowl or measuring cup
- Add small amounts of Water until desired consistency is reached
