Hoff's Taco Pasta Salad

 Hoff's Taco Pasta Salad

Yields: Around 13 cups
meat-free, dairy-free, egg-free, oil-free, soy-free
  

Ingredients:
  • 1lb GF Pasta
  • 1 15 oz can Organic Corn (rinsed & drained)
  • 1 15 oz can Black Beans (rinsed & drained)
  • 1 2.25 oz can Sliced Black Olives (rinsed & drained)
  • 1 cup Red Onion (chopped)
  • 1 16 oz jar Salsa
  • 3 tbsp Lime Juice
  • 1 packet Taco Seasoning
  • Sliced Avocado (optional garnish)

Directions:
  1. Cook pasta according to box directions till al dente
  2. Combine all ingredients in a very large mixing bowl, mixing until everything is coated well with the Salsa & seasonings
  3. Allow at least in a hour in the fridge for the flavors to blend before serving

Hoff’s Spring Rolls w/Dipping Sauce

Hoff’s Spring Rolls

meat-free, dairy-free, egg-free, oil-free, gluten-free

Yields: about 6 Rolls


Roll Ingredients:

  • Rice Paper Wrappers
  • 10-12 oz. package of Rice Noodles
  • Greens (of choice, shredded)
  • Cucumber (shredded)
  • Carrots (shredded)
  • Edamame (optional)
  • Avocado (optional)

Dipping Sauce Ingredients:

  • 1/4 cup Almond Butter Powder
  • 2 tbsp. Braggs
  • 1 tbsp. Rice Vinegar
  • 1 tbsp. Maple Syrup
  • 1 tbsp. Lime Juice
  • 1 tsp. Ginger
  • Water

Directions: 

  1. Prepare Noodles according to the box directions, set aside to cool (must be cool before wrapping or Rice Paper will break apart)
  2. Soak Rice Paper in Water for about 20 seconds
  3. Assemble Rolls, set aside (careful not to let them touch each other)
  4. Whisk Sauce ingredients together (except Water) in a bowl or measuring cup
  5. Add small amounts of Water until desired consistency is reached
