Hoff's TVP "Chicken" Noodle Soup (IP)
Yields: about 10 cupsmeat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free
Ingredients:
- 10 cups Water or Veggie Broth
- 2 cups GF Pasta
- 1 cup Soy Curls (broken into smaller pieces)
- 15 oz. can Carrots (rinsed & drained)
- 1 Sweet Onion (chopped)
- 1 tbsp. minced Garlic
- 2 tbsp. Nutritional Yeast (reserved)
- 4 tsp. Chicken Broth Powder
- 1 tsp. Poultry Seasoning
- 1 tsp. Umami Seasoning
- 1 tsp. Paprika
- 1 tsp. Garlic Powder
- 1 tsp. Onion Powder
- 1/2 tsp. Turmeric (for color)
- Salt/Pepper to taste
Directions:
- Combine all remaining ingredients in IP (except Salt/Pepper)
- Lock lid in place and make sure pressure release valve is closed
- Press "Manual" button, reduce time to 4 minutes (or half the Pasta cooking time, minus 1 minute)
- When done, use quick release method
- Add Salt/Pepper to taste & Nutritional Yeast
