Hoff's Pasta Fagioli (Instant Pot)
Yields: 5 servings
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free
Ingredients:
- 8 cups Veggie Broth/Water
- 8 oz. organic Tempeh (crumbled)
- 1 bunch fresh Parsley
- 1 jar Spaghetti Sauce (Prego Light)
- 15 oz. can Kidney Beans (rinsed & drained)
- 15 oz. can Great Northern Beans (rinsed & drained)
- 15 oz. can diced Tomatoes
- 1 cup gluten-free Pasta (small shape)
- 1 cup frozen Spinach/Kale
- 3/4 cup chopped Carrot
- 1 Sweet Onion (chopped)
- 1 tbsp. minced Garlic
- 1 tbsp. Italian Seasoning Blend
- 1 tbsp. Sugar
- 1 tsp. Onion Powder
- 1 tsp. Garlic Powder
Directions:
- Press IP Sautee button, add Onions and cook until translucent
- Add Garlic, stirring for 30 seconds before turning off the IP
- Stir remaining ingredients together in IP
- Close & lock lid
- Set Pressure Valve to Sealing
- Select Manual setting on High Pressure & cook for 7 minutes (or half pasta package cooking time)
- Quick release pressure
- Stir & serve
