Hoff's Mushroom Stroganoff III
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free
Ingredients:
- 16 oz. GF Pasta
- 16 oz. Mushrooms (large chop)
- 4 cups Vegetable Broth
- 2 tbsp. Braggs
- 1 Sweet Onion (chopped)
Sauce Ingredients:
- 12 oz. frozen Cauliflower (thawed or steamed)
- 1 1/2 cups unsweetened plain Plant-Milk
- Juice from 1 Lemon
- 1 1/2 tbsp. Apple Cider Vinegar
- 1 tsp. minced Garlic
- 1 tsp. Garlic Powder
- 1 tsp. Onion Powder
- Season with Sea Salt
Directions:
- In a large pot over medium-high heat, sautee Mushrooms & Onions in Aminos until caramelized
- Stir-in Pasta & Broth
- Bring to a boil, reduce to simmer, cover & cook for 17 minutes
- Meanwhile in a Vitamix, blend Sauce ingredients for 6 minutes
- Combine Sauce & Pasta, dig-in
