Hoff's Red Lentil Pumpkin Dal
Yields: 5-6 servingsmeat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free
Ingredients:
- 2 cups Jasmine Rice (prepared)*
- 1 cup Spinach*
- 1 cup Almond Milk*
- 1 cup Red Lentils
- 1.5 cups Water
- 1 15 oz. can Chickpeas (rinsed & drained)
- 1 15 oz. can Pumpkin
- 1 15 oz. can diced Tomatoes
- 1 Sweet Onion (half moon slices)
- Juice from 1 Lemon
- 1 tbsp. minced Garlic
- 1 tbsp. Garam Masala
- 1 tbsp. Brown Sugar
- 1 tsp. Onion Powder
- 1 tsp. Garlic Powder
- Season with Sea Salt
Directions:
- Mix everything together in IP (except* prepared Rice, Milk, Spinach & Lemon Juice)
- Close & lock lid
- Set Pressure Valve to Sealing
- Select Manual setting on High Pressure & cook for 2 minutes
- Natural release pressure for 10 minutes
- Stir in Milk, Spinach & Lemon Juice
- Plate Rice, layer with Dal - enjoy!
