Hoff's Burger in a Bowl

Hoff's Burger in a Bowl

Serves: 2
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free
 

Ingredients:

  • 4 cups Iceberg Lettuce (or of preference)
  • 2-4 Burgers (or of preference)
  • 1 cup Kraut
  • 1 cup Mushrooms (sliced)
  • 1 cup Sweet Onion (half moon slices)
  • Pickle Relish
  • Mustard
  • Ketchup
  • Sea Salt (optional)

Directions:
  1. Grill-up your Veggie Burgers!
  2. Meanwhile, sautee the Kraut, Mushrooms & Onions
  3. In 2 large bowls, divide ingredients equally
  4. Enjoy :)

Hoff's One Pot Spaghetti

Hoff's One Pot Spaghetti

Yields: 5-6 servings
meat-free, dairy-free, egg-free, oil-free, soy-free
, gluten-free


Ingredients:

  • 4 cups Water
  • 16 oz. gluten-free Pasta
  • 28 oz. can Tomato Sauce
  • 15 oz. can Lentils (rinsed & drained)
  • 1 cup Spinach (chopped)
  • 1 Sweet Onion (cut in half moons)
  • 1 tsp. minced Garlic
  • 1 tsp. Sugar (optional) 
  • 1 tsp. Italian Seasoning
  • 1 tsp. Garlic Powder
  • 1 tsp. Onion Powder

Directions:   

  1. Dump all ingredients into a large pot, make sure all Pasta is covered (add more Water, if necessary)
  2. Bring to a boil, stir, cover, reduce heat to a simmer
  3. Simmer for 17 minutes
  4. Stir & serve!

Hoff's Red Lentil Pumpkin Dal

Hoff's Red Lentil Pumpkin Dal

Yields: 5-6 servings
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free


Ingredients:

  • 2 cups Jasmine Rice (prepared)*
  • 1 cup Spinach*
  • 1 cup Coconut Milk* = 1 cup Plant-milk blended w/2 tbsp shredded Coconut
  • 1 cup Red Lentils
  • 1.5 cups Water
  • 1 15 oz. can Chickpeas (rinsed & drained)
  • 1 15 oz. can Pumpkin
  • 1 15 oz. can diced Tomatoes
  • 1 Sweet Onion (half moon slices)
  • Juice from 1 Lemon
  • 1 tbsp. minced Garlic
  • 1 tbsp. Garam Masala
  • 1 tbsp. Brown Sugar 
  • 1 tsp. Onion Powder
  • 1 tsp. Garlic Powder
  • Season with Sea Salt

 

Directions:

  1. Mix everything together in IP (except* prepared Rice, Milk, Spinach & Lemon Juice)
  2. Close & lock lid
  3. Set Pressure Valve to Sealing
  4. Select Manual setting on High Pressure & cook for 2 minutes
  5. Natural release pressure for 10 minutes
  6. Stir in Milk, Spinach & Lemon Juice
  7. Plate Rice, layer with Dal - enjoy!

Hoff's Sloppy Joe's II

Yields: 6-8 sandwiches
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free


Ingredients:

  • 2 cups Water
  • 1 cup Buckwheat Groats (rinsed) 
  • 15 oz. can Tomato Sauce
  • 1/4 cup chopped Onion
  • 1/4 cup chopped Red Pepper
  • 2 tbsp Ketchup
  • 1 tbsp Liquid Smoke
  • 1 tsp Smoke Paprika
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1/2 tsp Sea Salt

Directions:
  1. Mix everything together in IP
  2. Close & lock lid
  3. Set Pressure Valve to Sealing
  4. Select Steam setting on High Pressure & cook for 6 minutes
  5. Natural release pressure, at least 10 minutes
  6. Assemble your Sloppy Joe's - I prefer open-faced w/chopped Onion, Pickle Relish & Mustard
