Hoff’s Throw Together Soup (IP)
Serves: 4-6meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free
Ingredients:
- 4 cups Veggie Broth
- 16 oz. bag frozen Cauliflower
- 15 oz can Beans (rinsed & drained)
- 15 oz can diced Potatoes
- 1 carton Hungry Jack's Premium Hashbrown Potatoes (re-hydrated)
- 1 tsp. Smoked Paprika
- 1 tsp. Onion Powder
- 1 tsp. Garlic Powder
- 1 tsp. Sea Salt
Directions:
- Place all ingredients (except Hashbrowns) in Instant Pot
- Close & lock lid
- Set Pressure Valve to Sealing
- Select Manual setting on High Pressure & cook for 6 minutes
- Quick release pressure
- Using an immersion blender blend soup until smooth
- Stir in Hashbrowns & serve with some nice crusty bread
