Ingredients:
- 4 cups prepared Mashed Potatoes
- 2 bags frozen Organic Peas, Carrot, Corn mix
- 1 - 20 oz. can Jackfruit (rinsed, drained & chopped)
- 2 pre-cooked Yukon Gold Potatoes (chopped)
- 1 Onion (chopped)
- 2 cups Plant-based Milk (unsweetened)*
- 1 cup Water*
- 2 pre-cooked Yukon Gold Potatoes (rough chopped & reserved)*
- 1/3 cup Oats*
- 2 tsp. minced Garlic*
- 2 tsp. Onion Powder*
- 2 tsp. Garlic Power*
- 2 tsp. Chicken Broth Base*
- Season with Sea Salt & Pepper
Directions:
- Preheat oven to 400 degrees
- Stir together all ingredients in a 9X9 baking dish (except reserved* Potatoes, Milk, Water, Oats & Seasonings)
- Using a high speed blender, blend reserved* Potatoes, Milk, Water, Oats & Seasonings for 6 minutes
- Pour blended mixture into the Vegetable and stir to combine
- Top with Mashed Potatoes
- Bake for 15 minutes
- Broil for 5 minutes to crisp the top
