Hoff's Basic Veggie Soup (IP)

Hoff's Basic Veggie Soup (IP) 
Makes: About 10 cups
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free 

Ingredients:

• 4 cups Water
• 1/2 jar 23.5 oz. jar Prego Light Smart Traditional Sauce
• 16 oz. frozen Veggie Mix
• 15 oz. can Beans (rinsed & drained)
• 15 oz. can Diced Potatoes (rinsed & drained) 
• 1/2 Onion (chopped)
• 1 tbsp. minced Garlic
• 1 tsp. Veggie Broth Base
• Season with Sea Salt

Directions:

1. Turn sauté feature on & sweat Onions for a few minutes
2. Add Garlic & stir for 30 seconds
3. Turn off sauté feature
4. Add remaining ingredients (except Veggie Broth Base) into the Instant Pot
5. Close & lock lid
6. Make sure pressure release valve is closed
7. Cook Manually on High Pressure for 10 minutes
8. Quick Release
9. Stir in Veggie Broth Base
10. Serve with a nice crusty bread!
