Hoff's Basic Veggie Soup (IP)
Makes: About 10 cups
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free
Ingredients:
- 4 cups Water
- 1/2 jar 23.5 oz. jar Prego Light Smart Traditional Sauce
- 16 oz. frozen Veggie Mix
- 15 oz. can Beans (rinsed & drained)
- 15 oz. can Diced Potatoes (rinsed & drained)
- 1/2 Onion (chopped)
- 1 tbsp. minced Garlic
- 1 tsp. Veggie Broth Base
- Season with Sea Salt
Directions:
- Turn sauté feature on & sweat Onions for a few minutes
- Add Garlic & stir for 30 seconds
- Turn off sauté feature
- Add remaining ingredients (except Veggie Broth Base) into the Instant Pot
- Close & lock lid
- Make sure pressure release valve is closed
- Cook Manually on High Pressure for 10 minutes
- Quick Release
- Stir in Veggie Broth Base
- Serve with a nice crusty bread!
