Hoff's Spring Pasta
Yields: 5-6 servings
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free*
Ingredients:
- 16 oz. Pasta of choice*
- 1/2 cup Pasta Water (reserved, if needed)
- 1 carton sliced Mushrooms
- 1 bunch Asparagus (chopped)
- 1 Onion (sliced)
- Juice from 1/2 Lemon
- 1/3 cup Nutritional Yeast
- 1 tsp. minced Garlic
- 1 tsp. Broth Stock Powder
- 1 tsp. Garlic Powder
- 1 tsp. Onion Powder
- Salt & Pepper to taste
Directions:
- Cook Pasta according to directions
- Meanwhile sauté Onions until they begin to sweat
- Add minced Garlic, stirring for 30 seconds
- Add Mushrooms & Asparagus, stirring periodically until cooked
- Add to cooked Pasta, along with remaining ingredients
- If too dry, stir in reserved Pasta Water
- Plate & eat!
