- 1/2 cup Organic Corn Kernels
- 2 tbsp. Maple Syrup
- 1 tsp. Sea Salt
Directions:
- Add Corn Kernels to microwaveable container
- Microwave for 2 minutes (or less depending on your microwave)
- Stop Microwave when popping slows down
- Pour Popcorn into large bowl, mix in Syrup & Salt
- Enjoy the show!
Hoff’s Garlic Noodles (IP)
Serves: 3-4
meat-free, dairy-free, egg-free, oil-free, gluten-free
Ingredients:
- 16 oz. Gluten-free Spaghetti (broken into pieces)
- 4 cups Water
- 1 cup Edamame
- 6 tbsp. minced Garlic
- 4 tbsp. Braggs
- 2 tbsp. Brown Sugar
- 2 tsp. Garlic Powder
Directions:
- Turn on sauté feature
- Stir minced Garlic until golden brown
- Turn off sauté feature
- Spread Noodles, criss crossed, along bottom of IP
- Add remaining ingredients, do not stir
- Make sure Noodles are covered by Water, add more if needed
- Close & lock lid
- Set Pressure Valve to Sealing
- Select Manual setting on High Pressure & cook for 6 minutes
- Quick release pressure
- Stir & enjoy!
Hoff's Tuscan Soup (Instant Pot)
Yields: 10 cups
meat-free, dairy-free, egg-free, gluten-free, soy-free
Ingredients:
- 4 cups Veggie Broth
- 2 cups Plant-based Milk (reserved)
- 4-5 Yukon Gold Potatoes (pre-steamed & cubed)
- 5 oz. Fresh Baby Kale
- 1 15oz. can White Beans (rinsed & drained)
- Juice from 1/2 Lemon (reserved)
- 1 Sweet Onion (chopped)
- 2 tsp. Vegan Ham Seasoning (reserved)
- 1 tsp. minced Garlic
- 1 tsp. Oregano
- 1 tsp. Onion Powder
- Season with Sea Salt & Lemon Pepper
Directions:
- Sautée Onions on the Sautée setting in the IP, stir in Garlic for last 30 seconds
- Turn IP off to shut off Sautée setting
- Dump remaining ingredients into IP, except Kale, Milk & Lemon Juice
- Stir to combine
- Close & lock lid
- Set pressure valve to close
- Set Manual setting at High Pressure for 3 minutes
- Quick release steam
- Stir in Milk & Lemon Juice
- Using a immersion blender, blend soup until creamy, but with some chunk remaining
- Stir in Kale until wilted
- Season & serve with a nice crusty bread!

Yields: 5-6 servings

Ingredients:
- 16 oz. Pasta of choice*
- 1/2 cup Pasta Water (reserved, if needed)
- 1 carton sliced Mushrooms
- 1 bunch Asparagus (chopped)
- 1 Onion (sliced)
- Juice from 1/2 Lemon
- 1/3 cup Nutritional Yeast
- 1 tsp. minced Garlic
- 1 tsp. Broth Stock Powder
- 1 tsp. Garlic Powder
- 1 tsp. Onion Powder
- Salt & Pepper to taste
Directions:
- Cook Pasta according to directions
- Meanwhile sauté Onions until they begin to sweat
- Add minced Garlic, stirring for 30 seconds
- Add Mushrooms & Asparagus, stirring periodically until cooked
- Add to cooked Pasta, along with remaining ingredients
- If too dry, stir in reserved Pasta Water
- Plate & eat!
Hoff’s Oatmeal Raisin Cookies
Yields: 10 Cookies

Ingredients:
- 1 1/2 cups Old Fashioned Oats + 1/2 cup WO
- 1/2 cup Apple Sauce
- 1/2 cup Maple Syrup
- 1/3 Brown Sugar
- 1/3 cup Raisins
- 1 tsp. Cinnamon
- 1 tsp. Baking Powder
- 1 tsp. Sea Salt
Directions:
- Blend 1 1/2 cups Oats, Cinnamon, Baking Powder & Salt in a high speed blender until finely ground
- Pour dry ingredients to a mixing container and using a fork, stir in 1/2 cup of whole Oats, Sugar, Maple Syrup, Apple Sauce, & Raisins
- Scoop batter onto parchment lined cookie sheets or silicon mat
- Bake at 350 degrees for 15 minutes
- Remove from cookie sheet and allow to cool
