Hoff's Quinoa Stuffed Squash

Hoff's Quinoa Stuffed Squash
Serves: 2
meat-free, dairy-free, egg-free, gluten-free, soy-free

Ingredients:
  • 1 Acorn Squash
  • 1 cup Water
  • 1 cup Quinoa (rinsed)
  • 1/2 cup Edamame
  • 1/4 Red Onion (chopped)
  • 2 tsp. Garlic Herb Seasoning
  • Sea Salt to taste

Directions:
  1. Preheat oven to 425 degrees
  2. Pierce Squash 5-6 times
  3. Bake whole for 45-50 minutes(longer, if Squash is large)
  4. While that cooks, mix Water, Quinoa & Seasoning in Instant Pot, cook for 7 minutes
  5. Carefully cut Squash in half and de-seed (it's HOT)
  6. Season Squash with Sea Salt, set aside
  7. Stuff equal portions of Quinoa Mix into each half of Squash
  8. Enjoy!

Hoff Thoughts: Sometimes, I will clean the seeds as best I can, toss with some Sea Salt and sprinkle them on top of the Quinoa mix.
