Ingredients:
- 1 Acorn Squash
- 1 cup Water
- 1 cup Quinoa (rinsed)
- 1/2 cup Edamame
- 1/4 Red Onion (chopped)
- 2 tsp. Garlic Herb Seasoning
- Sea Salt to taste
Directions:
- Preheat oven to 425 degrees
- Pierce Squash 5-6 times
- Bake whole for 45-50 minutes(longer, if Squash is large)
- While that cooks, mix Water, Quinoa & Seasoning in Instant Pot, cook for 7 minutes
- Carefully cut Squash in half and de-seed (it's HOT)
- Season Squash with Sea Salt, set aside
- Stuff equal portions of Quinoa Mix into each half of Squash
- Enjoy!
Hoff Thoughts: Sometimes, I will clean the seeds as best I can, toss with some Sea Salt and sprinkle them on top of the Quinoa mix.
