Hoff’s Macaroni Salad

Hoff’s Macaroni Salad
Yields: About 13 cups
meat-free, dairy-free, egg-free, gluten-free

Ingredients:
  • 1 lb. Gluten-free Pasta
  • 1 cup Grape Seed Oil Vegenaise
  • 1/2 Red Onion (minced)
  • Juice from 1/2 Lemon
  • 2 tbsp. Dill Pickle Relish
  • 1 tbsp. Pickle Juice
  • 1 tbsp. Mustard
  • 1 tsp. Garlic Powder
  • 1 tsp. Sea Salt
  • Black Pepper w/ Lemon to taste
  • Paprika for optional garnish

Directions:
  1. Cook pasta to al dentde according to directions on package
  2. Combine all ingredients in a large bowl & allow to marinate in fridge at least one hour before serving
