Hoff's Orange Rice (Instant Pot)
Hoff's Orange Rice (Instant Pot)
Serves: 4-5
meat-free, dairy-free, egg-free, oil-free, gluten-free, soy-free
Ingredients:
Directions (Instant Pot):
Hoff Thoughts: Sliced Almonds or Cashews pieces would be a delightful addition to this side dish.

Ingredients:
- 2 cups Orange Juice
- 2 cups Brown Rice
- 1/3 cup Braggs
- 1 15oz. can Mandarin Oranges in Juice
- 2 tsp. Garlic Powder
- 1 tsp. Ginger Powder
Directions (Instant Pot):
- Combine all ingredients in the IP, except the Oranges
- Lock lid in place and make sure pressure release valve is closed
- Press "Manual" button
- Decrease cooking time to 22 minutes
- When done, use natural release method
- Stir in Oranges

Sweet Korean Red Lentils (IP)

Ingredients:

Ingredients:
- 1 1/2 cups Water
- 1 cup Spinach (optional green add!)
- 1 cup Red Lentils
- 1/2 Sweet Onion (chopped)
- 1/4 cup Braggs/Coconut Aminos*
- 2 tbsp. Coconut Sugar
- 2 Garlic Cloves (minced)
- 2 tsp. Ginger (minced)
- Mix everything together in the IP
- Lock lid in place and make sure pressure release valve is closed
- Press "Manual" button & reduce time to 15 minutes
- When done, use manual release method for 10 minutes, then quick release
- Mix in fresh Spinach until wilted down
- Serve over Rice

Ingredients:
- 1 cup Mashed Potatoes
- 2 tbsp. Nutritional Yeast
Directions:
- Place Nutritional Yeast on small plate or in a small bowl
- Form Mashed Potatoes into bite size balls
- Roll balls in Nutritional Yeast
- Arrange balls in the Airfryer basket in an even layer to allow adequate airflow
- Bake at 390 degrees for 10 minutes
