meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free
Ingredients:
- 2 cups Jasmine or Brown Rice
- 2 1/2 cups Water
- 1 15 oz. can Black Beans (rinsed & drained)
- 1 15 oz. can Organic Corn (rinsed & drained)
- 1 2.5 oz. sliced Black Olives (rinsed & drained)
- 1-2 cups frozen chopped/sliced Onion/Pepper Mix
- Juice from 1 Lime
- 1 tsp. Taco Seasoning
- 1 tsp. Chipotle
- 1 tsp. Cumin
- 1 tsp. Sea Salt
Directions:
- Using the Sautée setting, sautée Onions & Peppers
- Turn off IP to stop Sautée feature
- Add Water, Rice, Beans, Corn & Seasonings, stir to combine
- Close & lock lid
- Set Pressure Valve to Sealing
- Select Manual setting & reduce timer to 3 minutes (Jasmine) or 22 minutes (Brown Rice)
- Natural release pressure (Jasmine) or Manual release pressure (Brown Rice)
- Fluff Rice with a fork
- Add Lime Juice and stir to combine
Hoff Thoughts: I personally like the Chipotle burrito bowl, so I just eat this with some organic corn chips or you can make burritos or tacos!
