meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free
Ingredients:
- 4 large Portabellas
- 1/2 cup Pizza/Spaghetti/Marinara Sauce
- 1/3 cup Black Olives (rinsed & drained)
- 1/3 cup Onion (chopped)
- 1/3 cup Red Pepper (chopped)
- Nutritional Yeast
- Vegan Cheese (optional)
Directions:
- Preheat oven to 450 degrees
- Remove stem & gills from Portabellas
- Spoon Sauce into cleaned-out Portabella
- Sprinkle Nutritional Yeast over Sauce
- Divide remaining ingredients among each Portabella
- Place "Pizza" on baking sheet
- Cook for 15 minutes
- Let rest for 15 minutes
- Cut in half & serve
Hoff Thoughts: I use frozen Onions & Peppers for this, much easier than chopping & dealing with the leftovers.
