Hoff's Quinoa Nachos/Taco Salad II

Hoff's Quinoa Nachos/Taco Salad II
Yields: two hearty entrees
meat-free, dairy-free, egg-free, soy-free, gluten-free

Ingredients:

Nacho "Meat"
  • 1 cup Quinoa
  • 1 1/2 cups Veggie Broth
  • 1 tsp. Taco Seasoning
  • 1 tsp. Cumin
  • 1 tsp. smoked Paprika
  • 1 tsp. Garlic Powder
  • 1 tsp. Sea Salt
Cheese Sauce:
  • 1 14 oz. bag frozen Cauliflower (defrosted)
  • 1/2 cup unsweetened plain Plant Milk
  • 1/2 cup Salsa
  • 1/2 cup Nutritional Yeast
Nachos:
  • Organic Corn Chips/2 cups Romain Lettuce + 1/4 cup broken Chips
  • 1 Avocado (chopped/optional)
  • 2 tbsp. diced Onion
  • 1 15 oz. can Black Beans
  • 1 15 oz. can organic Corn (rinsed & drained)

Directions:
  1. Prepare Quinoa per the box directions, adding the rest of the ingredients, I prefer using the Instant Pot - throw all the ingredients in the IP, seal & lock lid, set Manual timer for 4 minutes, allow to Natural release for 10 minutes, then Quick release
  2. Meanwhile put Cheese Sauce ingredients into Vitamix & blend on high for 6 minutes
  3. Separately, mix together & heat up Black Beans & Tomatoes (drain before serving)
  4. When the Quinoa, Cheese & Beans are done, assemble your Nachos or Salad anyway you see fit

Yields: 4-6 Servings
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free

Ingredients:

  • 2 cups Orange Juice
  • 2 cups Veggie Broth
  • 2 cups Risotto Rice
  • 1 15 oz. can Mandarin Oranges in light syrup
  • 3 tbsp. chopped Cashews (optional)
  • Sea Salt
Directions:
  1. Mix Juice, Broth & Rice together in IP
  2. Lock lid in place and make sure pressure release valve is closed
  3. Press "Manual" button & reduce time to 5 minutes
  4. When done, use Quick release method
  5. Stir in Mandarin Oranges with Juice & Cashew pieces
  6. Season with Sea Salt

Hoff's Skyline Chili (Instant Pot)
Serves: 5-6
meat-free, dairy-free, egg-free, oil-free, gluten-free

Ingredients:
  • 16 oz. gluten-free Spaghetti
  • 1 package Tempeh
  • 2 1/2 cups Broth
  • 1 15 oz. can Kidney Beans (rinsed & drained)
  • 1 15 oz. can Tomato Sauce
  • 1 15 oz. can fire-roasted diced Tomatoes
  • 1 6 oz. can Tomato Paste
  • 1/2 Sweet Onion (chopped)
  • 1 tsp. Chili Powder
  • 1 tsp. smoked Paprika
  • 1 tsp. Cumin
  • 1 tsp. Garlic Powder
  • 1 tsp. Onion Powder

Directions:
  1. Prepare Spaghetti according to package directions
  2. Beak Tempeh into medium chunks & blend on low in a high-speed blender to form crumbles
  3. Combine the rest of ingredients, including Tempeh in the IP
  4. Lock lid in place and make sure pressure release valve is closed
  5. Press "Manual" button
  6. Decrease cooking time to 10 minutes
  7. When done, use Quick release method
  8. Stir in Spaghetti, top with optional Nutritional Yeast or Hoff’s Cheese Sauce

Hoff Thoughts: If you're from around Ohio, you know that we love our Chili with Spaghetti, Skyline Chili style.  Of course this typically is accompanied by a sky high mound of shredded cheddar cheese, save yourself the artery clogging and use Nutritional Yeast instead.

Ingredients:
  • 1 cup rolled Oats
  • 1/4 cup Water 
  • 1/4 cup Raisins
  • 8 pitted Dates
  • 1 tbsp. Almond Butter
  • 1 tbsp. Cacao Powder
  • 1/2 tsp. Sea Salt

Directions:
  1. Blend ingredients together; I use my NutriBullet
  2. Roll into bite size balls
  3. Allow to set-up in the fridge
  4. Enjoy as a snack on the go!

  • 1 Avocado (chopped/optional)
  • 2 tbsp. diced Onion
  • 1 16 oz. can fat-free Refried Beans
  • 1 15 oz. can fire roasted diced Tomatoes
  • 1 2.25 oz. can sliced Black Olives (rinsed & drained)

Directions:
  1. Prepare Quinoa per the box directions, adding the rest of the ingredients, I prefer using the Instant Pot - throw all the ingredients in the IP, seal & lock lid, set Manual timer for 4 minutes, allow to Natural release for 10 minutes, then Quick release
  2. Meanwhile put Cheese Sauce ingredients into Vitamix & blend on high for 6 minutes
  3. Separately, heat up Refried Beans
  4. When the Quinoa, Cheese & Beans are done, assemble your Nachos anyway you see fit

Hoff Thoughts: I like to prepare this as a main entree for two people on those nights when I just want some comfort food, but I suppose you could share with others as a party appetizer.

Hoff's Tomato Spinach Sauce Over Rice
Yields: 4 servings
meat-free, dairy-free, egg-free, oil-free, gluten-free

Ingredients:
  • 2 cups Jasmine Rice
  • 2 1/2 cups Water
  • 1 container Spinach
  • 1 medium-large Onion (half moon slices)
  • 1 32 oz. can Tomato Puree
  • 1 15 oz. can Chickpeas (rinsed & drained)
  • 1 tbsp. minced Garlic
  • 1 tbsp. Tomato Paste
  • 1 tsp. Cumin 
  • 1 tsp. Paprika
  • 1 tsp. Garlic Powder
  • 1 tsp. Onion Powder
  • Sea Salt to taste

Directions:
  1. Place Rice & Water in an Instant Pot & cook on Manual for 3 minutes or prepare per the package instructions
  2. In a large, non-stick skillet over medium-high heat, sautee Onions until softened
  3. Stir in Garlic for 30 seconds to prevent burning
  4. Add the spices and stir until they become fragrant
  5. Stir in the Tomato Paste
  6. Reduce heat to a simmer
  7. Pour in Tomato Puree
  8. Stir in Chickpeas
  9. Top with Spinach & cover until leaves wilt
  10. Stir to combine & serve over Rice

Ingredients:

  • 2 cups Orange Juice
  • 2 cups Brown Rice
  • 1/3 cup Braggs
  • 1 15oz. can Mandarin Oranges in Juice
  • 2 tsp. Garlic Powder
  • 1 tsp. Ginger Powder

Directions (Instant Pot):
  1. Combine all ingredients in the IP, except the Oranges
  2. Lock lid in place and make sure pressure release valve is closed
  3. Press "Manual" button
  4. Decrease cooking time to 22 minutes
  5. When done, use natural release method
  6. Stir in Oranges

Hoff Thoughts: Sliced Almonds or Cashews pieces would be a delightful addition to this side dish.

Ingredients:

  • 1 1/2 cups Water 
  • 1 cup Spinach (optional green add!)
  • 1 cup Red Lentils
  • 1/2 Sweet Onion (chopped)
  • 1/4 cup Braggs/Coconut Aminos*
  • 2 tbsp. Coconut Sugar
  • 2 Garlic Cloves (minced)
  • 2 tsp. Ginger (minced)
Directions:
  1. Mix everything together in the IP
  2. Lock lid in place and make sure pressure release valve is closed
  3. Press "Manual" button & reduce time to 15 minutes
  4. When done, use manual release method for 10 minutes, then quick release
  5. Mix in fresh Spinach until wilted down
  6. Serve over Rice

  • 1 cup Mashed Potatoes
  • 2 tbsp. Nutritional Yeast

Directions:
  1. Place Nutritional Yeast on small plate or in a small bowl
  2. Form Mashed Potatoes into bite size balls
  3. Roll balls in Nutritional Yeast
  4. Arrange balls in the Airfryer basket in an even layer to allow adequate airflow
  5. Bake at 390 degrees for 10 minutes

Hoff's Roasted Grain Salad
Yields: 5-6 Servings

Ingredients:
  • 2 1/2 cups Water 
  • 2 cups Jasmine Rice
  • 2 Zucchini (chopped)
  • 1 bunch Asparagus (chopped) 
  • 1 package sliced Mushrooms
  • 1/2 Red Onion (diced)
  • 1 15 oz. can Chickpeas (rinsed & drained) 
  • 1 tsp. Paprika
  • 1 tsp. Onion Powder
  • 1 tsp. Garlic Powder
  • Sea Salt
  • Braggs Liquid Aminos or Water
 Dressing Ingredients:
  • 1/2 cup Maple Syrup
  • 1/3 cup Braggs Liquid Aminos 
  • 1/4 cup Water
  • 2 tsp. Ginger
  • 2 tsp. Garlic

Directions:
  1. Preheat oven to 425 degrees
  2. Mix Water & Rice together in IP
  3. Lock lid in place and make sure pressure release valve is closed
  4. Press "Manual" button & reduce time to 5 minutes
  5. When done, use manual release method for 10 minutes, then quick release
  6. Meanwhile, line a baking sheet with parchment paper and spread out Veggies & Chickpeas
  7. Spray each with a little Braggs or Water
  8. Sprinkle with Seasonings, mix to coat
  9. Bake for 25 minutes
  10. Stir roasted Veggies/Chickpeas into Rice & place in fridge to chill
  11. Blend Dressing ingredients together and dress salad just before serving

Serves: 4
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free


Ingredients:
  • 2 cups Jasmine or Brown Rice
  • 2 1/2 cups Water
  • 1 15 oz. can Black Beans (rinsed & drained)
  • 1 15 oz. can Organic Corn (rinsed & drained)
  • 1 2.5 oz. sliced Black Olives (rinsed & drained)
  • 1-2 cups frozen chopped/sliced Onion/Pepper Mix
  • Juice from 1 Lime
  • 1 tsp. Taco Seasoning
  • 1 tsp. Chipotle
  • 1 tsp. Cumin
  • 1 tsp. Sea Salt

Directions:
  1. Using the Sautée setting, sautée Onions & Peppers
  2. Turn off IP to stop Sautée feature
  3. Add Water, Rice, Beans, Corn & Seasonings, stir to combine
  4. Close & lock lid
  5. Set Pressure Valve to Sealing
  6. Select Manual setting & reduce timer to 3 minutes (Jasmine) or 22 minutes (Brown Rice)
  7. Natural release pressure (Jasmine) or Manual release pressure (Brown Rice)
  8. Fluff Rice with a fork
  9. Add Lime Juice and stir to combine

Hoff Thoughts: I personally like the Chipotle burrito bowl, so I just eat this with some organic corn chips or you can make burritos or tacos!

Mock Tuna Salad III

Yields: 6-8 open-faced sandwiches 
meat-free, dairy-free, egg-free, soy-free, gluten-free

Ingredients:

  • 1 15 oz. can Chickpeas (rinsed & drained)
  • 3 tbsp. Red Onion (chopped)
  • 3 tbsp. Vegan Mayo
  • Juice from 1 Lemon
  • 2 tbsp. Pickle Relish
  • 1 tbsp. Kelp Granules

Directions:
  1. Using a high speed blender, pulse Chickpeas & Mayo until ground
  2. Transfer to a medium bowl & mix in remaining ingredients
  3. Serve chilled just as you would tuna salad

Hoff Thoughts: It's the Kelp Granules that gives this salad its "tuna fish" taste.  No pickle relish?  Just chop up one pickle.

Tortilla Bake
Yields: 6-8 serving
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free

Cheese Sauce Ingredients:

  • 1 14 oz. can diced Potatoes (rinsed & drained)
  • 1 cup Salsa
  • 1/2 cup Nutritional Yeast
  • 1/2 cup unsweetened plain Plant Milk
  • 1 tsp. Smoked Paprika
  • 1 tsp. Cumin
 Bake Ingredients:
  • 9 small Corn Tortillas (quartered)
  • 1 15 oz. can Black Beans (rinsed & drained)
  • 1 15 oz. can organic Corn (rinsed & drained)

Directions:
  1. Preheat oven to 375 degrees
  2. Blend Cheese Sauce ingredients in a high speed blender like a Vitamix until smooth
  3. Spread 1/3 of the Cheese Sauce on the bottom of a 2.2 quart glass or ceramic baking dish
  4. Layer 18 Tortillas pieces on top of Sauce
  5. Spread 1/2 can of Black Beans & 1/2 can of Corn over Tortillas
  6. Top with 1/3 Cheese Sauce
  7. Layer remaining Black Beans, Corn^& Tortillas
  8. Top with remaining Cheese Sauce
  9. Cover with parchment lined tin foil & bake for 30 minutes
  10. Top with optional sliced Black Olives

Ingredients:
  • 1 15 oz. can organic Corn with liquid
  •  2 tbsp. Honey
  • 1 tsp. Sea Salt
Directions:
  1. Using a high speed blender, blend Corn until smooth
  2. Pour into a small saucepan
  3. Cook over medium to high heat until liquid cooks off
  4. Remove from heat, stir in Honey & Salt
  5. Place in airtight container in fridge for up to 2 weeks

Hoff Thoughts: Perfect for some GF English Muffins!  Want it savory - just omit the Honey.

Hoff's "Butter" German Noodles
Yields: 6-8 servings
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free

Ingredients:
  • 16 oz. gluten-free Pasta
  • 1/2 small Cabbage (chopped)
  • 1 Sweet Onion (half-moon slices)
  • 1 15 oz. can diced Potatoes (rinsed & drained)
  • 2 cups Sauerkraut
  • Liquid Smoke (optional)
"Butter Sauce"
  • 2 15 oz. cans organic Corn (rinsed & drained)
  • 2 tsp. Sea Salt
 
Directions:
  1. Prepare Pasta according to package directions
  2. Meanwhile in a medium non-stick frying pan, brown Onions
  3. Add Cabbage and sautee until soft; add couple of splashes of Liquid Smoke
  4. Remove from heat and set aside
  5. Using a high-speed blender, blend Corn & Salt together until smooth & creamy
  6. When ready, drain Pasta and return to pot
  7. Stir all ingredients together, including Sauce and return to simmer to heat through
  8. Season with Salt if needed

Hoff's Chickpea Burgers
Yields: 8 burgers
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free

Ingredients:

  • 2 15 oz. cans Chickpeas (do not drain)
  • 1 cup of Rolled Oats 
  • 1/2 cup chopped Onion
  • 1/2 cup Nutritional Yeast
  • 1 tbsp. Mustard
  • 1 tbsp. dried minced Onion
  • 1 tsp. Smoked Paprika
  • 1 tsp. Garlic Powder
  • 1 tsp. Onion Powder
  • 1 tsp. Sea Salt

Directions:
  1. Place all ingredients (Chickpeas first) in a high speed blender, blend until smooth
  2. Form into patties
  3. Allow to set-up in fridge for 20 minutes, uncovered before cooking or freeze
  4. Grill or broil until golden brown, about 10 minutes each side

Hoff Thoughts: I prefer to form my burgers using a silicon (BPA-free) burger press mat and freezing - much easier to work with. Two scoops of mix yields the perfect burger.

Ingredients:
  • 3 cups Water 
  • 2 cups Jasmine Rice
  • 1 cup Quinoa
  • 1/2 Red Onion (chopped)
  • 1 15 oz. can Chickpeas (rinsed & drained)
  • 1 15 oz. can organic Corn (rinsed & drained) 
  • 1 15 oz. can Mandarin Oranges in light syrup
  • 1/3 cup Braggs
  • Juice from 1 Lime
Directions:
  1. Mix Water, Rice & Quinoa together in IP
  2. Lock lid in place and make sure pressure release valve is closed
  3. Press "Manual" button & reduce time to 5 minutes
  4. When done, use manual release method for 10 minutes, then quick release
  5. Stir in Red Onion, Chickpeas, Corn, Mandarin Oranges with Juice, Braggs & Lime Juice
  6. Allow to chill & marinate in fridge before serving

Quick GF Vegan English Muffins

Quick GF Vegan English Muffins
Yields: 2 Muffins
dairy-free, egg-free, oil-free, soy-free, gluten-free

Ingredients:
  • 2/3 cup Rolled Oats
  • 1 tbsp. Chia Seeds
  • 1 tbsp. Sugar
  • 1 tsp. Baking Powder
  • Pinch Sea Salt
  • 6 tbsp. Applesauce
  • 2 tbsp. Water

Directions:
  1. Using a high speed blender, blend Oats into a fine powder
  2. Add remaining ingredients and blend on low to combine
  3. Use a small spatula to mix in any dry mix stuck in the corners
  4. Divide batter into two mugs & tap down to flatten
  5. Microwave each mug on High for 2 minutes
  6. Cool, remove Muffin, slice in half & toast for optimum enjoyment 

Hoff Thoughts: You can get 6 tbsp. of Applesauce out of one little snack pack cup.  Not exactly an English Muffin, but it's a tasty little breakfast bread.  Use this trick to easily clean your blender.

Ingredients:
  • 2 cups frozen Fruit
  • 2 frozen Bananas
  • 1/2 cup plant-based Milk
  • 1/2 tsp. Vanilla Extract
  • Pinch of Sea Salt

Directions:
  1. Dump all ingredients into a Vitamix
  2. Using the tamper, push the ingredients into the blades
  3. Blend until smooth about 30 seconds
  4. Serve immediately for soft serve or freeze for hard serve

 Hoff Thoughts: any frozen fruit will do, use your favorite - try black cherries, mango or peach!

Hoff's Coffee Maker Sweet Tea
Yields: 24 cups
dairy-free, egg-free, oil-free, soy-free, gluten-free

Ingredients:
  • 24 cups Water (divided)
  • 2 organic Black Tea Bags
  • 2 organic Peach Tea Bags (or flavor of choice)
  • 2 cups White Sugar or 1/2 cup Maple Syrup

Directions:
  1. Pour 12 cups of Water into water reservoir of coffee maker
  2. Spread out & minimally layer Tea Bags in the filter basket
  3. Brew Tea as you would coffee
  4. Add Sugar to large carafe/container
  5. Pour hot Water over Sugar, stir to dissolve
  6. Add another 12 cups of cold Water
  7. Stir
  8. Place in refrigerator to chill before serving or serve over ice 

Hoff Thoughts: Add juice from one Lemon to add brightness.

Ingredients:
  • 1/2 cup Blueberries
  • 1/2 cup Almond Butter
  • 1/4 cup GF All-Purpose Baking Flour
  • 1/4 cup Maple Syrup
  • 1 ripe Banana
  • 1 tbsp. Chia Seed + 1 tbsp. Water
  • 1 tsp. Vanilla Extract
  • 1/2 tsp. Baking Soda
  • 1/2 tsp. Sea Salt
Directions:
  1. Preheat oven to 375F degrees
  2. Combine Chia Seed & Water and set aside for 15 minutes
  3. Add all ingredients except Blueberries to a high-speed blender and blend on high until batter is smooth & creamy
  4. Stir in Blueberries by hand
  5. Pour batter into a silicon muffin pan (or use liners), filling each cavity until it is about 3/4 full
  6. Bake for 10-15 minutes, until the tops of your muffins are set and a toothpick inserted into the middle comes out clean
  7. Allow muffins to cool in pan for 10 minutes before removing
  8. Store in an air-tight container for up to a week (if they last that long)

Hoff's Quinoa Chipotle Bowl (IP)
Servings: 4-5
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free


Ingredients:
  • 1 1/2 cups Water
  • 1 cup Quinoa
  • 1 15 oz. can Black Beans
  • 1 15 oz. can organic Corn (rinsed & drained)
  • 1 15 oz. can Fire Roasted Tomatoes 
  • 1/2 cup frozen chopped Onions
  • Juice from 1 Lime
  • 1 tsp. Taco Seasoning

Directions:
  1. Stir all ingredients together in the IP
  2. Close & lock lid
  3. Set Pressure Valve to Sealing
  4. Select Manual setting & reduce timer to 4 minutes
  5. Natural Release pressure for 10 minutes, then Quick Release
  6. Add Lime Juice and stir to combine

Hoff’s Sushi Burrito

Hoff’s Sushi Burrito
Yields: 5 Burritos
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free

Burrito Ingredients:
  • Sushi Rice
  • 5 Nori Wrappers
  • 15 oz. can Black Beans (do not drain)
  • 15 oz. can organic Corn (rinsed & drained)
  • 1 small Onion (chopped) 
  • Salsa (optional)
Sushi Rice:
  • 3 cups Water 
  • 2 1/2 cups Sushi Rice
  • Juice from 1 Lime
  • 2 tbsp. Rice Vinegar 
  • 1 tbsp. Sugar 
  • 1 tsp. Onion
  • 1 tsp. Garlic
  • 1 tsp. Cumin
  • 1/4 tsp. Sea Salt

Directions: 
  1. Mix together Water & Rice
  2. Close & lock lid
  3. Set Pressure Valve to Sealing
  4. Select Rice setting
  5. Manual release pressure for 10 minutes, then Quick release
  6. Remove the inner pot from IP to help Rice cool quicker
  7. While Rice is still hot, stir in remaining Sushi Rice ingredients
  8. Set aside until cool to handle & prep fillings 
  9. Meanwhile, prepare your filling ingredients
  10. Spread 1/2 cup of Rice in an even layer all over one of the Nori Wrapper, leaving about an 1" space on one end of the wrapper
  11. Layer ingredients at the opposite end of the Burrito (not the 1" gap end)
  12. Using a Sushi mat, roll Burrito like you would Sushi
  13. Wet 1" gap lightly to seal roll
  14. Allow to sit for 14 minutes so Nori Wrapper can soften by absorbing moisture from the Rice before eating or place in fridge until ready to eat
  15. For ease in eating, wrap Burrito in tin foil

Hoff Thoughts: Any ingredients can be used, let your imagination run wild.  Makes a great on the go lunch or snack - which is why this serves so much, I'm currently eating Sushi Burritos daily at work.

Hoff's Sweet Potato Sushi

Hoff's Sweet Potato Sushi
Yields: 2 Rolls/20 pieces
meat-free, dairy-free, egg-free, oil-free, gluten-free, soy-free

Ingredients: 
  • 2 cups Water 
  • 1 ½ cups Sushi Rice 
  • 2 tbsp. Rice Vinegar 
  • 1 tbsp. Sugar 
  • ¼ tsp. Sea Salt 
  • 1 cup Sweet Potatoes
  • 16 Asparagus Spears

Directions: 

  1. Mix together Water & Rice
  2. Close & lock lid
  3. Set Pressure Valve to Sealing
  4. Select Rice setting
  5. Manual release pressure for 10 minutes, then Quick release
  6. Remove the inner pot from IP to help Rice cool quicker
  7. While Rice is still hot, stir in Vinegar, Sugar & Salt
  8. Set aside until cool to handle
  9. Meanwhile, steam Asparagus in the microwave or use raw 
  10. Using a Sushi Bazooka Roller, place 1/2 cup Rice onto each side of the roller
  11. Place 4 Asparagus Spears into each well of Rice
  12. Top with Sweet Potatoes
  13. Close the Roller and push out onto one Nori Sheet
  14. Roll, seal with Water, and let sit for 15 minutes to allow Nori Sheet to absorb moisture from the Rice and become pliable
  15. Using a sharp knife and a glass of water, cut Sushi wetting the knife after each cut
  16. Place Sushi in a non-stick pan over medium-heat and cool long enough to lightly brown each  side
  17. Enjoy!

Hoff's Crisps

Hoff's Crisps
Yields: 2-3 serving
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free

Ingredients:
  • 4-6 medium Yukon Gold Potatoes
  • 1 tsp. Smoked Paprika
  • 1 tsp. Garlic Powder
  • 1 tsp. Onion Powder
  • 1 tsp. Sea Salt
Directions:
  1. Preheat oven to 450 degrees
  2. Slice the Potatoes into fry-like wedges
  3. Spread out wedges onto a baking sheet lined with parchment or a silicon mat
  4. Sprinkle with Seasonings
  5. Toss to evenly coat
  6. Bake for 30-45 minutes

Hoff Thoughts: Yeah, I know technically these are Potato Wedges or large fries, but I've been watching a lot of Australian YouTube lately and they call them Crisps and I like that!  The Smoked Paprika is what really makes these Potatoes special.

DIY Conditioning Dandruff Hair Treatment
Treatments: Numerous, depends on hair length

Ingredients:
  • 1/2 cup Coconut Oil
  • 1 tbsp. Avocado Oil
  • 1 tbsp. Jojoba Oil
  • 1 tbsp. Hemp Seed Oil
  • 5 drops Tea Tree Oil

Directions:
  1. Pour all ingredients into a small plastic container
  2. Shake to combine
  3. Scoop out some treatment and apply to hair scalp to ends
  4. Let sit for at least 20 minutes
  5. Wash out

Hoff Thoughts: I like to use this hair treatment once a week.  I apply it in the morning, put my hair up in a top knot and go about my day - mind you on a day that I'm not leaving the house.  The Tea Tree Oil makes this a nice treatment for those with dandruff.  If that's not a concern for you (lucky duck), leave out or replace with your fav essential oil.

Hoff's Vegan Loaf (IP)

Hoff's Vegan Loaf (IP/Oven)
Yields: 1 Loaf
meat-free, dairy-free, egg-free, oil-free, soy-free*, gluten-free**

Loaf Ingredients:
  • 1 cup Brown Rice
  • 1 cup Water 
  • 1 carton Mushrooms
  • 1 15 oz. can vegan, oil-free refried Beans
  • 1 1/2 cup of Rolled Oats
  • 1/2 cup chopped Onions
  • 1/2 cup BBQ Sauce
  • 1 tbsp. minced Garlic
  • 2 tbsp. Coconut Aminos* or Braggs
  • 1 tbsp. vegan Worcestershire Sauce**
  • 2 tsp. Sea Salt
  • 1 tsp. Smoked Paprika
  • 1 tsp. Garlic Powder
  • 1 tsp. Onion Powder
Glaze Ingredients:
  • 3/4 cup Ketchup
  • 1 tbsp. Honey Mustard

Directions:
  1. Preheat oven to 375 degrees
  2. Meanwhile, combine Rice & Water in IP
  3. Lock lid in place and make sure pressure release valve is closed
  4. Select Manual setting on High Pressure & cook for 22 minutes
  5. Natural release pressure for 10 minutes, then Quick release
  6. Using a high speed blender, chop Mushrooms into tiny pieces
  7. Add remaining Loaf ingredients & Mushrooms to IP & mix together
  8. Press mixture into a glass/silicone loaf dish
  9. Bake for 30 minutes
  10. Meanwhile, mix Ketchup & Mustard together to form a Glaze
  11. Remove Loaf from oven, apply Glaze
  12. Bake for another 15 minutes
  13. Remove from oven & rest for 10 minutes before serving

Hoff Thoughts: *Omit the Worcestershire Sauce & use Coconut Aminos to make soy & gluten-free.  You don't need to use an Instant Pot to make the Rice, I just find it easier.  Serve with Hoff's Instant Mushroom Gravy.

Chocolate Chip Cookie Pie

Chocolate Chip Cookie Pie
Yields: 1 Pie
dairy-free, gluten-free, oil-free, soy-free, gluten-free


Ingredients:
  • 1 15oz. can Chickpeas (with liquid)
  • 2/3 cup King Arthur Gluten-free Flour
  • 1/3 cup Almond Butter
  • 1/4 cup Maple Syrup
  • 2 tbsp. Almond Milk
  • 1 tsp. Vanilla Extract
  • 1 tsp. Baking Powder
  • 1 tsp. Sea Salt
  • 1/2 cup Vegan Chocolate Chips

Directions:
  1. Preheat oven to 350 degrees
  2. Blend all ingredients in a high speed blender, except Chocolate Chips
  3. Once blended, turn to low, add Chocolate Chips and blend a few seconds to incorporate 
  4. Pour batter into glass/silicone pie dish
  5. Bake for 25 minutes or until pie is set and lightly browned
