Yields: 6 Burritos
meat-free, dairy-free, egg-free, oil-free, soy-free
Ingredients:
- 6 Whole Wheat Lavash Wraps/Tortillas
- 1 1/2 cups Water
- 1 cup Jasmine Rice
- 1 15 oz. can Black Beans (rinsed & drained)
- 1 2.5 oz. can sliced Black Olives (rinsed & drained)
- 1 cup organic Corn
- 1 medium Sweet Onion (half moon slices)
- 1 Red Pepper (sliced)
- Juice from 1 Lime
- 2 tsp. Sea Salt
- 1 tsp. Taco Seasoning
- 1 tsp. Chipotle
- 1 tsp. Cumin
Directions:
- Using the Sautée setting, sautée Onions & Peppers
- Turn off IP to stop Sautée feature
- Add Water, Rice, Beans, Olives, Corn & Seasonings, stir to combine
- Close & lock lid
- Set Pressure Valve to Sealing
- Select Manual setting & reduce timer to 3 minutes
- Natural release pressure
- Fluff Rice with a fork
- Add Lime Juice and stir to combine
- After assembling, I like to "panini press" the wraps using my Cuisinart Griddler, purely optional
