Vegan Cheezecake? Yes Please!
If a meltable vegan cheese wasn't enough - Daiya has done it again with their new line of vegan cheezecake!
Available in plain, key lime, chocolate and strawberry - there is a flavor profile to delight every cheesecake lover. Personally, I haven't had cheesecake since going vegan and I missed it! I dived into the chocolate and was not disappointed - neither was my non-vegan, very opinionated mother and that's saying a lot!
The cakes are a little small - think six reasonable pieces and a little pricey coming in around $8, but they deliver.
So good, even non-vegans will ask for seconds!
I plan to keep of couple of these babies in my freezer for unexpected guests.

Hoff's Unrolled Cabbage Rolls (Instant Pot)

Yields: 5-6 servings
meat-free, dairy-free, egg-free, gluten-free
Ingredients:
- 2 1/2 Water
- 2 cups Jasmine Rice
- 1 jar oil-free Spaghetti Sauce (Prego Light)
- 1 small Cabbage (chopped)
- 4 Apple Sage Field Roast Sausages (chopped)
- 1 Sweet Onion (half moon slices)
- Sea Salt
Directions (Instant Pot):
- Place Rice in IP
- Add Water & stir to combine
- Place Cabbage, Onions & Sausage on top of Rice (do not stir to combine)
- Lock lid in place and make sure pressure release valve is closed
- Select Manual setting on High Pressure & cook for 5 minutes
- Manual release pressure
- Add Spaghetti Sauce & stir to combine
- Season with Sea Salt if desired

Teriyaki Chicken, Broccoli & Rice
Thanks to a package of Butler Soy Curls, a jar of teriyaki sauce and my Instant Pot, this meal came together with very little effort or time.
First, I re-hydrated the curls by soaking in warm water for 10 minutes and then draining off the excess water.
Then I got 2 cups of Jasmine rice & 2 1/2 cups of water started in the Instant Pot - using the Rice setting. (I finally figured out by allowing the steam to naturally release, the rice turns out fluffy and moist. Quick release yields a sticky, dry rice.)
Then I water sautéed a head of chopped broccoli, adding the soy curls and teriyaki sauce after a few minutes. Put the lid one and let everything simmer until the rice was done.
Super simple, quick & delicious!
