Yields: 6-8 serving
meat-free, dairy-free, egg-free, oil-free
Ingredients:
- 12 oz. Whole Wheat Pasta
- 1 Zucchini (shredded)
- 1 Cucumber (de-seeded & chopped)
- 1 15 oz. can Chickpeas (rinsed & drained)
- 1 15 oz. can Organic Corn (rinsed & drained)
- 1 2.5 oz. can Sliced Black Olives (rinsed & drained)
- 1 cup Shredded Carrots
- 1 cup oil-free Hummus
- 1/4 cup Braggs
Directions:
- Cook Pasta according to directions, rinse with cold water
- Meanwhile mix together Hummus & Braggs in a large bowl
- To the same bowl stir together remaining ingredients
- Allow to chill in the fridge before serving
