Ingredients:
- 16 oz. Whole Wheat Pasta
- 2 Vegan Veggie Burgers
- 1 Zucchini (shredded)
- 1 Red Pepper (deseeded & rough chopped)
- Juice from half a Lemon
- 1 15 oz. can Tomato Sauce
- 12 oz. Silken Tofu
- 1/2 cup plain Almond Milk
- 3/4 cup Nutritional Yeast
- 2 tbsp. Cashews
- 1 tsp. Cumin
- 1 tsp. Garlic Powder
- 1 tsp. Onion Powder
- 1/2 tsp. Paprika
Directions:
- Cook Pasta according to directions
- Meanwhile blend Sauce ingredients in a Vitamix until smooth & well combined
- Nuke Veggie Burgers for 1-2 minutes, finely chop to resemble ground beef
- Drain Pasta, return to pot, mix in "Cheese Sauce," Veggie Burger & Zucchini, heat through
- Enjoy!
