Ingredients:
- 2 cups Jasmine Rice
- 1 14oz. can low fat Coconut Milk
- 1 1/4 cups Water
- 1 15 oz. can Black Beans (rinsed & drained)
- 2 large Mangos (chopped)
- 2 tbsp. Coconut Sugar
- Season with Sea Salt
Directions (Instant Pot):
- Place all ingredients into the pot, stir
- Lock lid in place and make sure pressure release valve is closed
- Cook Manually on High Pressure for 10 minutes
- When done, use Quick Release Method
Directions (Stovetop):
- In a medium pot, bring Coconut Milk, Water & Sugar to a boil
- Reduce to simmer
- Add Rice, Black Beans & Mango, cover and cook for 20 minutes
- Fluff with fork
