Hoff's Moroccan Stew II
Yields: 4-5 servings
meat-free, dairy-free, egg-free, oil-free, soy-free
Ingredients:
- 2 cups Whole Wheat Israeli Couscous
- 2 1/2 cups Water
- 1 12 oz. block frozen cooked Winter Squash (thawed)
- 1 15oz. can Chickpeas (rinsed & drained)
- 1 15oz. can diced Tomatoes (seasoned)
- 1 Zucchini (chopped)
- 1 small - medium Sweet Onion (chopped)
- 1/4 cup Almond Butter (oil-free)
- 1 Lime
- 2 Garlic Cloves (minced)
- 2 tbsp. Pine Nuts
- 1 tbsp. Nutritional Yeast
- 1 tsp. Ground Ginger
- 1 tsp. Cumin
- 1 tsp. Cinnamon
- Sea Salt to taste
Directions:
- Bring Water to boil in medium pot, reduce to simmer, add Couscous & Nutritional Yeast, cover & cook for 15 minutes
- Remove from heat & fluff Couscous with fork when done
- Meanwhile in a large pot over medium-high heat lightly brown Pine Nuts until fragrant, remove & set aside
- In same pot, sauté Onions until softened, add Garlic and cook for 1 minute, stirring to prevent burning
- Stir in seasonings and cook until fragrant about 30 seconds
- Add Chickpeas, Tomatoes, Zucchini, Squash & Almond Butter; cover & simmer for 20-30 minutes or until Zucchini has softened
- Remove pan from heat, stir in Couscous, Pine Nuts & juice from Lime

Yield's: 9" Pie
dairy-free, egg-free, oil-free, gluten-free
Ingredients:
- 2 cups raw Pecans
- 1/4 cup Sugar
- 1 1/2 tbsp. Water (Optional)
- 1/2 tsp. Sea Salt
- 2 12oz. blocks Organic Silken Tofu
- 1 12oz. bag Vegan Chocolate Chips
- 1 tsp. Vanilla
- Pinch of Sea Salt
Directions:
- Preheat oven or toaster oven to 350 degrees
- Meanwhile using a high speed blender, starting on low and increasing to high, blend Pecans & Sugar & Sea Salt into a fine meal
- If mixture is too dry, add Water & blend to combine
- Press mixture into the bottom of a 9" pie dish
- Spread Chocolate Chips onto a small baking pan & place in oven for about 3-4 minutes or until melted
- Using a high speed blender, blend Tofu, Melted Chocolate Chips, Vanilla & Salt until smooth
- Pour mixture into pie dish
- Allow a minimum of 20 minutes to set-up in the fridge

Hoff Thoughts: I know this sounds like a lot of salt, but trust me, that's how pasta is supposed to be cooked. The pasta & asparagus will absorb some of the salt and be delicious.
Yields: 4-6 servings

Ingredients:
- 12 oz. Whole Wheat Pasta
- 2 tbsp. Sea Salt
- 1 bunch Asparagus (chopped)
- 1 cup frozen Peas
- 1 15oz. can Tomato Puree
- 12 oz. Tofu
- 1/2 cup plain Almond Milk
- 3/4 cup Nutritional Yeast
- 2 tbsp. Cashews
- 1 tbsp. Arrowroot
- Juice from half a Lemon
- 1 tsp. Cumin
- 1 tsp. Garlic Powder
- 1 tsp. Onion Powder
- 1/2 tsp. Paprika
Directions:
- Place Peas in colander and rinse with cold water to thaw slightly
- Bring large pot of water to boil, with Sea Salt, stir
- Cook Pasta till al dente
- Add Asparagus with 5 minutes of cooking time left
- Meanwhile put remaining ingredients into Vitamix (high speed blender) & blend on high until creamy and smooth
- Drain Pasta over Peas, combine with Sauce

- 2 cups Brown Rice Flour
- 1 cup Nutritional Yeast
- 2 tbsp. Dried Onion Flake
- 2 tsp. Garlic Powder

Directions:
- Dump all ingredients in a large wide mouth mason jar
- Shake it up to combine
- Store in the mason jar

- 2 cups unsweetened Plain Almond Milk
- 1/4 cup Gravy Mix
- 2 tbsp. Vegan Worcestershire Sauce
- Pepper to taste
- Sea Salt to taste
Directions:
- In a small pot over medium-high heat, whisk together Milk, Mix & Worcestershire Sauce
- Bring to a boil, reduce to a simmer and whisk until desired consistency is reached, about 3-4 minutes
- Season with Salt & Pepper

Hoff Thoughts: Don't bother chopping the Cashews, just put them in a sandwich bag and pound to bits with the end of a glass or something similar that won't break. Ah stress relief...

- 7 slices Multigrain Bread (cut into bite size cubes)
- 1 small Sweet Onion (chopped)
- 1 cup Veggie Broth
- 1/2 cup Cranraisins
- 2 tbsp. Raw Cashews (chopped)
- 2 tsp. Italian Seasoning
- 1 tsp. Garlic Powder
- 1 tsp. Onion Powder
- 1 tsp. fine Sea Salt
Directions:
- Preheat oven to 375 degrees
- Spread out Onions into a 9X12 glass baking dish
- Bake or 10 minutes
- Add Bread & bake for another 10 minutes or until toasted
- Transfer Bread & Onions to a large mixing bowl and combine with Cranraisins, Cashews & Seasonings
- Add a little Broth at a time until Bread is moist but not soaked (all liquid may not be needed)
- Transfer Stuffing to large glass baking dish
- Cover & bake for 25 minutes
- Remove cover & bake for additional 10-15 minutes to crisp the top

Hoff Hit: Say No To Green Peppers
There so many peppers to choose from - green, yellow, orange and red. Which to choose, which to choose. Well, I can tell you which not to choose, the green one. Why? Well, technically, it's unripe. Yep, those yellow, orange and red peppers were once green peppers, but they were allowed to mature. The problem with the green is that due to their unripeness, they are harder on the digestive system. Don't be hard on your digestive system.
Personally, I go for the red ones - sweeter and packed full of Vitamin C!

Hoff Thoughts: You want just enough liquid to cover the ingredients, if you don't have enough, just add some Water.

Ingredients:
- 32 oz. Veggie Broth
- 16 oz. Seitan (cubed)
- 5-6 Baby Potatoes (quartered)
- 3 large Carrots (chopped)
- 1 15 oz. can Green Beans (rinsed & drained)
- 1 15 oz. can Organic Corn (rinsed & drained)
- 1 medium Sweet Onion (chopped)
- 2 tbsp. Arrowroot
- 2 Bay Leaves
- 2 tbsp. Vegan Worcestershire Sauce
- 2 tbsp. Dried Onion
- 1 tbsp. Tomato Paste
- 1 tbsp. Cumin
- 1 tsp. Paprika
- 1 tsp. Onion Powder
- 1 tsp. Garlic Powder
- Pepper (to taste)
Directions:
- Dissolve Arrowroot in a few tablespoons of Water, set aside
- Add all ingredients, including dissolved Arrowroot to the pot & stir to combine
- Close & lock lid
- Set Pressure Valve to Sealing
- Select Manual setting, High Pressure & set for 10 minutes
- Manually release pressure
- Remove Bay Leaves

Hoff's Mashed Potatoes (Instant Pot)

Hoff Thoughts: I use Baby Yellow Potatoes because they naturally have a rich, buttery flavor and therefore additional fake butter is not needed.

- 1 small bag Baby Dutch Yellow Potatoes (about 1.5 pounds) or Yukon Gold
- 2 cups Water
- 4 Garlic Cloves
- 1/4 cup Nutritional Yeast
- 1 tbsp. Dried Onion
- 1-2 tsp. Sea Salt
Directions:
- Cut Potatoes in half or quarters depending on size
- Place in Instant Pot, add Garlic & Water
- Set Manual setting at High Pressure for 10 minutes
- Manually release steam
- Add Nutritional Yeast, Dried Onion & Sea Salt
- Using a Potato Masher, mash Potatoes & Garlic right in the pot using the leftover Potato Water as the liquid

Hoff Thoughts: Did you know that Brussels Sprouts got their name from, well, Brussels where they were cultivated in Belgium as early as the 16th century. These mini cabbage-like guys are said to improve digestive health. And if you're fortunate enough to find these little ones still stuck to their stalk, stick the end in some water to prolong their life - they also tend to be cheaper this way.
Serves: 2
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free
Ingredients:
- 1 lb. Brussels Sprouts
- 1/2 cup Water or Broth
- 2 tbsp. Balsamic Vinegar
- 1 tbsp. Maple Syrup
- 1 tbsp. Stone Ground Mustard
- Sea Salt
Directions:
- Prepare the Brussels by cutting off the end and quartering
- In a medium pot, place Brussels, Water/Broth & a pinch of Sea Salt, cover and cook on high for 8 minutes
- Transfer Brussels to a non-stick frying pan over medium-high heat
- Coat with Balsamic, Maple Syrup & Mustard, cover and cook for an additional 5 minutes or until desired consistency is reached, stirring occasionally as the Sauce caramelizes
- Finish dish with Sea Salt

Hoff Thoughts: This recipes comes together quickly because it's considered a Dump recipe, meaning, no measuring, little cutting - just dump the ingredients in & go!

- 4 cups Veggie Broth
- Water
- 1 15 oz. can diced Potatoes (rinsed & drained)
- 1 15 oz.can sliced Carrots (rinsed & drained)
- 1 15 oz.can Corn (rinsed & drained)
- 1 15 oz.can Bean of choice (rinsed & drained)
- 1 15oz can Tomato Sauce
- 1 15oz can Diced Tomatoes (seasoned)
- 2 cups small Whole Wheat Pasta
- 1-2 small Onions (chopped)
- 2-3 Garlic Cloves (minced)
- 1 tbsp. Italian Seasoning
- 1 tsp. Cumin
- 1 tsp. Garlic Powder
- 1 tsp. Onion Powder
- 2-3 tsp. Sea Salt
Directions:
- In a large stock pot on medium-high heat, soften Onions, add Garlic & stir for 30 seconds to prevent burning
- Add Veggie Broth & Tomato Sauce & all ingredients except Water & Pasta
- Add just enough Water to cover all the veggies, may need no Wate
- Bring to a boil
- Add Pasta, cook according to package directions
- Serve!

I Got A New Toy: The Instant Pot!!!
I have a new crush! This time it's on my brand new Instant Pot!!!
Like all new relationships, I was pretty nervous at first. Frankly, pressure cookers scare the hell out of me. Like they just explode for no reason right? Not so much, new pressure cookers are quite safe these days. Especially the Instant Pot which is pretty dummy proof, even for a newbie & sports 10 safety features just to ease one's mind.
So, what is an Instant Pot? Well, it's like a pressure cooker on steroids. This is not your grandma's relic from the dark ages, this baby's got skills!
Check this out.
The new 2014 3rd Generation model is 7 cookers in 1! It has a Bean/Chili setting, Rice setting, Yogurt setting, Soup Setting, Grain setting, Meat/Stew and Poultry setting (if you're into that sort of thing). It can also be used as a Slow Cooker, to Steam or to Sauté/Brown. So basically this one machine just replaced your bean cooker, rice cooker, steamer, crock pot and frying pan. That's a lot of cabinet space. The Keep Warm setting, well keeps things warm. There's even a Timer that allows you to preset the cooker to start and stop so a hot meal is waiting for you once you arrive home. Basically, you can cook an entire meal in one pot; I love that!
But what sealed the deal for me was the stainless steel pot - no non-stick chemicals!
I'm just getting started with this baby, but I do have a few recipes cooking which will be featured under Recipes: Instant Pot.

Ingredients:
- 1 15 oz. can Organic Corn (rinsed & drained) (1/3 cup reserved)
- 1 15 oz. can diced Potatoes (rinsed & drained) (1/3 cup reserved)
- 1 1/2 cups Veggie Broth
- 1 clove Garlic
- 1/2 tsp. Onion Powder
- 1/2 tsp. Sea Salt
Directions:
- Place all ingredients (minus reserved Corn & Potatoes) in a Vitamix and blend on high for 6 minutes
- If using a traditional blender, blend until smooth and then heat as usual
- Add reserved Corn & Potatoes and stir to combine
- May need to be heated additionally on the stove to warm the added Corn & Potatoes

Hoff Thoughts: This will keep well in an airtight container (like a mason jar) in the cupboard for a few months. Can also be used to enhance rice dishes or anything that needs a little boost.

- 1 cup Sesame Seeds
- 1 cup Sunflower Seeds
- 1 cup Raisins
- 1/4 cup Nutritional Yeast
- 2 tbsp.Onion Powder
- 1 1/2 tbsp. Cumin
- 1 tbsp. Chili Powder
Directions:
- Bring a non-stick pan to medium-high heat
- Toast Sesame & Sunflower Seeds, stirring until Seeds become fragrant and begin to pop, turning a golden color
- Turn off heat
- Stir in Raisins & Seasonings until well combined
- Remove from heat and allow to cool

Hoff Thoughts: A Vitamix was used for this recipe; results may vary with a traditional blender. More or less sweeteners may be needed depending on the sweetness of the Oranges and tartness of the Cranberries.
Yields: About 6 cups
Ingredients:
- 3 Seedless Oranges - peeled and sectioned
- 1/2 cup fresh or frozen Cranberries
- 6 Ice Cubes
- 1 1/2 cups Water
- 2 tbsp. Honey (sweeten to taste)
- 3 tsp. Sugar (sweeten to taste)
Directions:
- Add all ingredients to blender
- Blend for 1 minute for pulp-free (30 seconds for pulp)
- Serve immediately
Hoff Thoughts: A Vitamix was used for this recipe; results may vary with a traditional blender. More or less sweeteners may be needed depending on the sweetness of the Oranges and tartness of the Cranberries.

Hot Apple Cider Tea - Please & Thank You
Autumn is upon us and I just discovered Republic of Tea's Hot Apple Cider Herbal Tea. Let me tell you friends, it is beyond delightful. This is not your typical, run-of-the-mill tea.
This naturally-caffeine tea contains: apple pieces, cinnamon, orange peel, rose hips, berry leave, natural apple flavor, ginger root, cloves, natural lemon flavor, citric acid, cardamom seeds.
Its aroma fills the room with the comforting scent of warm apples. While good alone, I like to sweeten with a hit of sugar & honey. It's not exactly cider, think of it as cider lite.
Just one more way to savor all that autumn brings and chase off a chill.
Or get a little creative in the kitchen; dump the contents of one tea bag into Hoff's Pumpkin Pancakes or Hoff's Ginger Molasses Cookies to take these recipes to the next level.

Make The Most Of Brushing Your Teeth!
Thanks to electric toothbrushes, we've all been trained to brush our teeth for 2 minutes - 30 seconds for each four zones of the mouth. You could just stand there and stare at your face in the mirror or you could create killer calves. That's right, while I'm polishing my pearly whites, I'm also doing calf raises.
Use your free hand to steady yourself using the counter and...
First 30 seconds, feet facing forward
Second 30 seconds, feet pointed slightly in
Third 30 seconds, feet pointed slightly out
Last 30 seconds, feet facing forward (and feel the burn)
That's it! Now spit, rinse & shake those calves out.

Ingredients:
- 2 cups pitted Dates
- 3-4 Golden Delicious Apples
- 2 frozen Bananas
- 1 tbsp. Chia Seeds
- 1 tsp. All Spice or Pumpkin Spice
- Cold Water
Directions:
- Place Dates in a high-speed blender (Vitamix)
- Add just enough Water to cover
- Let soak for about 20-30 minutes
- Rough chop Apples and add to blender
- Add Bananas
- Add Chia Seeds & Spice
- Fill with cold Water just until 1/2" of food is left exposed
- Blend until smooth & well combined

Hoff Thoughts: Times this recipe by 5 (keep Tahini at 2 tbsp.) to get enough dressing to last 2 people for at least 5 days.

- 1 tbsp. Braggs

- In a small jar, dump all ingredients, screw on lid and shake, shake, shake
- Drizzle 2 tsp. of dressing over a handful of salad greens, pair 1 tbsp. nut of choice and 1 tbsp. dried fruit of choice

Hoff's Mustard Sauce
Hoff's Mustard Sauce

dairy-free, egg-free, oil-free, gluten-free

Hoff Thoughts: This sauce is a take on a sauce that my mother used to make by combining mayonnaise and mustard. So simple, so unhealthy, but so damn good! She would pour it over Cauliflower and than bake the entire Cauliflower head until soft. I now use this sauce for any veggie that needs a little TLC.

Ingredients:
- 12 oz. Silken Tofu
- 1 Lemon
- 3 tbsp. Mustard
- 1 tbsp. Balsamic Vinegar
- 1 tsp. Sugar
- 1 tsp. Dijon Mustard
- 1/2 tsp. Sea Salt
Directions:
- In a high powered blender or Vitamix, blend all ingredients until smooth
- Pour over desired destination

The Teal Pumpkin Project
As a severe food allergy suffer myself, this project is near and dear to my heart. And frankly anything that makes Halloween an even more "awesomer" holiday for one and all is alright in my book!
This Halloween, FARE (Food Allergy Research & Education) is encouraging communities to start a new tradition that will help make this holiday season less scary for children with food allergies: the Teal Pumpkin Project.
This campaign encourages people to raise awareness of food allergies by providing non-food treats for trick-or-treaters and painting a pumpkin teal - the color of food allergy awareness - to place in front of their house along with a free printable sign from FARE to indicate they have non-food treats available.
The Teal Pumpkin Project is designed to promote safety, inclusion and respect of individuals managing food allergies – and to keep Halloween a fun, positive experience for all.
