About a month ago, I finally made it to Mitchell's Ice Cream to check out their newly crafted vegan ice creams. I wish I would have checked them out sooner because, OMG!
They only have two flavors, which coincidentally
tend to sell-out: Salted Caramel Pecan, made with coconut milk flavored with homemade toasted pecan butter, caramelized brown sugar and sea salt and Chocolate, made with coconut milk and Belgian 72% chocolate. The ingredients alone make you drool.
I naturally had to check both out (for you readers; I do it all for you...) and got a double scoop of each. AMAZING! The Chocolate is super rich, creamy and literally melts in your mouth and pairs so well with the mellow salty kick of the Salted Caramel Pecan. I highly recommend that you do the same and get both... together, the perfect pairing.

So, I was super excited when my local Heinen's grocery store started carrying both flavors. Unfortunately, they are $5.99 a pint - OUCH! The steep sticker shock kept me from my beloved new find for quite some time until recently...
Being my birthday month (yeah, that's right, all of July is blocked for my birthday extravaganza!!!), I decided to splurge to celebrate. Supreme yumminess ensued in the comfort of my cozy home. I still can't justify a $12 ice cream run any ole' day of the week, but this just might be my new celebration ritual!
