Yields: about 2 dozen
dairy-free, egg-free, oil-free, soy-free
Ingredients:
- 2 cups Whole Wheat Pastry Flour
- 2 cups Whole Oats
- 1 cup Brown Sugar
- 1 cup Raisins
- 1 cup pitted Dates
- 1 cup Apple Sauce
- 3 tbsp. Chia Seeds
- 3 tbsp. Water
- 1 tbsp. Vanilla Extract
- 1 tsp. Baking Soda
- 1 tsp. Baking Powder
- 1 tsp. Cinnamon
- 1 tsp. Sea Salt
Directions:
- Mix Chia Seeds & Water and let sit for 5 minutes or until gelled
- Preheat oven to 350 degrees
- Using a Mini Food Processor, finely chop Dates
- Meanwhile in a medium bowl, whisk together Flour, Oats & Brown Sugar, Baking Soda, Baking Powder, Cinnamon & Salt
- In another bowl, mix together Raisins, Dates, Apple Sauce, Gelled Chia Seeds & Vanilla
- Mix the wet ingredients into the dry ingredients
- Drop spoonfuls onto a non-stick cookie sheet or parchment paper lined cookie sheet
- Bake for 10 minutes, using the back of a spatula flatten each cookie, bake for another 5 minutes
I like things that are baked for short period. 10 minutes is fine :-)

ReplyDeleteIf baking for only 10 minutes, I would flatten the cookies after 5 minutes, they don't tend to spread on their own.
