Hoff's Quick & Easy Lentil Soup
Hoff's Quick & Easy Lentil Soup
Yields: About 10 cups

Hoff Thoughts: Arrowroot is used as a thickener, like Kuzu Root or Cornstarch.

Ingredients:
- 4 cups Veggie Broth
- 4 cups Water
- 1 cup Jasmine Rice
- 1 can Lentils (rinsed & drained)
- 1 can sliced Carrots (rinsed & drained)
- 1 can diced Potatoes (rinsed & drained)
- 1 can Tomato Sauce
- 2 tbsp. Arrowroot
- 1 tbsp. Italian Seasoning
- 2 tsp. Sea Salt
- 1 tsp. Cumin
- 1 tsp. Onion Powder
- 1 tsp. Garlic Powder
Directions:
- In a large stock pot over medium-high heat, combine all ingredients (except Arrowroot)
- Bring to a boil
- Remove about 1 cup of liquid and stir in Arrowroot until well dissolved; add back to soup
- Reduce to simmer & cover
- Cook for 15 minutes

Hoff's Get Up & Go Smoothie

Ingredients:
- 1 cup Steel Cut Oatmeal
- 1 cup Water
- 1 1/2 cups Water
- 1 Banana
- 1 handful Spinach
- 1/2 cup frozen Blueberries
- 1 1/2 cups frozen Strawberries
- 3 pitted Dates
Directions:
- Soak the Oatmeal in the 1 cup Water overnight in the fridge
- In the morning, dump the Oatmeal into a high speed blender (Vitamix)
- Break up Banana & add
- Add remaining ingredients
- Blend on high for about 30-60 seconds
- Start the day!

Ask The Hoff: Kiwi Skin Edible?

Can I eat that furry skin on a kiwi? It's such a pain to peel those things.

What's up Kiwi Lover!
Yes, that furry brown skin IS edible. Just cut off the nubby ends and either slice or eat like you would an apple. Be sure to wash first.
While the skin is full of fiber and nutrients, that skin creeps me out (I have texture issues)! So for me, I cut one end off, place the kiwi on that end then use the other nubby end to steady the fruit as I slice the skin off in downward sawing motion with a paring knife - then slice of chump. No slipping, no fur!

Stretch that Maple Syrup!

I don't know about you, but in my house, maple syrup flows like water! Even in Ohio, where we make our own; getting your hands on the good stuff can put a dent in your wallet.
Instead of hoarding your stash like the Grinch, stretch that glorious gift from nature, while cutting down the calories and infusing some extra nutrients...
Here's how:
Mix 1/2 cup Maple Syrup with 1/2 cup unsweetened Apple Sauce
That's it, now share.

Hoff Thoughts: How to handle leftovers? There won't be any. Ok, ok, these don't look so great, but we're going for taste here, not a beauty contest.
Yields: 1 bunch of Kale
dairy-free, egg-free, oil-free, gluten-free
Ingredients:
- 1 bunch of Kale (must be dry)
- 1 Red Pepper (rough chopped)
- Juice of 1 Lemon
- 1 Garlic clove
- 1/2 cup Cashews
- 1/3 cup Nutritional Yeast
- 1 tbsp. Braggs
- 1 tsp. Paprika
- 1 tsp. Onion Powder
- 1 tsp. Garlic Powder
Directions:
- Preheat oven to 350 degrees
- Blend all ingredients (minus the Kale) in a high speed blender (ahem, Vitamix)
- De-stem Kale and tear or cut into chip size pieces
- In a medium bowl, mix together Kale & "Cheddar" Sauce (just get your hands in there)
- Spread Kale onto parchment paper lined baking sheet
- Bake for 10-20 minutes or until crispy, halfway through mix-up the Kale
