Yields: 6-8 servings
meat-free, dairy-free, egg-free, soy-free
Ingredients:
- 32 oz. Veggie Broth
- 16 oz. cubed Seitan
- 1 15 oz. can Organic Corn (rinsed & drained)
- 1 15 oz. can Green Beans (rinsed & drained)
- 6 Baby Red Potatoes (cubed)
- 2 cups Baby Carrots (halved)
- 1/2 cup Brown Rice Flour
- 2 Bay Leaves
- 2 tbsp. Dried Onion
- 1 tbsp. Liquid Smoke
- 1 tbsp. Cumin
- 1 tsp. Paprika
- 1 tsp. Onion Powder
- 1 tsp. Garlic Powder
- Pepper (to taste)
- Sea Salt (to taste)
Directions:
- Mix pinch of Sea Salt, Pepper, Onion Powder, Garlic Powder with Flour
- Dredge Seitan to coat
- In a large stock pot over medium-high heat, lightly brown Seitan
- Add all ingredients, except Potatoes to the pot
- Add enough Broth to just cover ingredients
- Bring to a boil
- Reduce to low, cover and cook for 20 minutes
- Add Potatoes and more Water if necessary
- Cover and cook for an additional 20 minutes
- Serve!
