Hoff's Broccoli Pasta Cauliflower Alfredo

Yields: 4-6 servings
meat-free, dairy-free, egg-free, oil-free, soy-free

Ingredients:
  • 1lb. Whole Wheat Pasta
  • 1 head Broccoli (chopped)
  • 5 cups Cauliflower (chopped)
  • 1/2 cup plain Almond Milk
  • 1/3 cup Cashews
  • Juice from 1/2 Lemon
  • 1 Garlic Clove
  • 2 tsp. Sea Salt
  • 1 tsp. Garlic Powder
  • 1 tsp. Onion Powder
  • Pinch Nutmeg
  • Black Pepper (to taste)
Directions:
  1. Bring one large pot of water to boil, cook Pasta according to directions
  2. Meanwhile, steam Cauliflower until fork tender, about 5-8 minutes
  3. In a Vitamix/Blender, place remaining ingredients & steamed Cauliflower
  4. Blend until smooth, about 2-3 minutes
  5. With 3-4 minutes of cooking time left, add Broccoli to Pasta cooking water (check Broccoli for desired doneness)
  6. Drain Pasta & Broccoli, combine with Sauce & heat through
