Yields: 4-6 servings
meat-free, dairy-free, egg-free, oil-free, soy-free
Ingredients:
- 1lb. Whole Wheat Pasta
- 1 head Broccoli (chopped)
- 5 cups Cauliflower (chopped)
- 1/2 cup plain Almond Milk
- 1/3 cup Cashews
- Juice from 1/2 Lemon
- 1 Garlic Clove
- 2 tsp. Sea Salt
- 1 tsp. Garlic Powder
- 1 tsp. Onion Powder
- Pinch Nutmeg
- Black Pepper (to taste)
- Bring one large pot of water to boil, cook Pasta according to directions
- Meanwhile, steam Cauliflower until fork tender, about 5-8 minutes
- In a Vitamix/Blender, place remaining ingredients & steamed Cauliflower
- Blend until smooth, about 2-3 minutes
- With 3-4 minutes of cooking time left, add Broccoli to Pasta cooking water (check Broccoli for desired doneness)
- Drain Pasta & Broccoli, combine with Sauce & heat through
