Mushroom Burgers
Yields: 4
meat-free, dairy-free, egg-free, oil-free
Ingredients:
- 4 Whole Wheat Hamburger Buns
- 4 Portabella Mushroom Caps
- 1/2 Sweet Onion (cut into half moon slices)
- 1/2 cup BBQ Sauce (oil-free)
- 1/2 cup Water
Directions:
- Preheat oven to 400 degrees
- Remove the stem & scrape out the gills of each Mushroom using a spoon
- Place Mushrooms in a single layer in a glass baking dish
- Mix together BBQ Sauce & Water, pour over Mushrooms & Onions
- Toss to coat & allow to marinate for at least one hour
- Bake covered for 15 minutes
- Assemble Burgers as normal
Hoff Thoughts: I prefer my Mushroom Burgers with double mustard, pickle relish, romaine lettuce and a slice of avocado (makes up for the lack of cheese). If you don't mind the mess, these taste even better on the grill.
