Ingredients:
- 1 15 oz can Hominy (rinsed & drained)
- 1 cup Spinach (chopped)
- 1 cup Red Pepper (chopped)
- 1 cup Sweet Onion (chopped)
- 1/2 tsp Onion Powder
- 1/2 tsp Garlic Powder
Directions:
- Sautee Red Pepper & Onions in a non-stick skillet over medium-high heat until lightly browned and softened
- Add remaining ingredients, plus seasonings and toss until heated through
Hoff's Thoughts: I typically have this as a side at breakfast with Hoff's French Toast or Hoff's Pancakes. However, this dish can easily serve as a side for dinner.
