meat-free, dairy-free, egg-free, oil-free, soy-free
Ingredients:
- 1 can Black Beans (rinsed & drained)
- 1 can Tomato Sauce
- 1 cup Water
- 1 clove Garlic
- 1 tbsp Nutritional Yeast
- Cilantro
- 1 Zucchini (chunked)
- 1 tsp Onion Powder
- 1 tsp Cumin
- 1 tsp Sea Salt
Directions
- In a Vitamix, blend together, Black Beans, Tomato Sauce, Water, Garlic & Cilantro for 5 minutes
- Add Zucchini, Onion Powder, Cumin & Salt and blend for 30 seconds
My2Cents: No Vitamix? No worries, blend normally and then heat soup on the stove. Preferably, you'd use a handful of fresh Cilantro in this, but if using dried, go for about 1 tbsp worth.
