Ingredients:
- 1/4 cup Cashews (chopped)
- 1 Zucchini - sliced lengthwise
- 1/2 Onion (sliced into half moons)
- 2 Whole Wheat Wraps
- Hummus
Directions:
- Toast Cashews in a non-stick frying pan over medium heat until browned & fragrant
- Cook Zucchini in non-stick frying pan until soft & both sides browned
- Caramelize Onions
- Spread Hummus on Wrap
- Layer Cashews, Zucchini, Onions & Greens down the center of the Wrap
- Roll Wrap & Enjoy!
My2Cents: If your pan is large enough, caramelize the Onions in a corner, while leaving the rest of the pan open for the Zucchini slices.
